Abstract

Food safety is determined by cleanliness and the implementation of hygiene and sanitation practices that meet standards, so it is necessary to increase the knowledge of food handlers, one of which is through educational innovation. Interactive video media through the Edpuzzle platform can be an interesting method to increase the knowledge of food handlers. This study aims to determine the effect of hygiene and sanitation education, as well as the effectiveness of educational media on improving the knowledge of food handlers at the Sultan Ageng Tirtayasa University Canteen. This study used a quasi-experimental design with a non-equivalent control group design, and total sampling technique on 53 food handlers in the Sultan Ageng Tirtayasa University Canteen. Data collection was conducted using questionnaires and analyzed using the Wilcoxon test, Paired T-test, and Mann-Whitney test. The results showed that hygiene and sanitation education using conventional video media and interactive video media had an effect on increasing hygiene and sanitation knowledge among food handlers at the Sultan Ageng Tirtayasa University Canteen (p-value < 0.05). In addition, there were differences in the effectiveness of educational media in improving food handlers' knowledge, with the experimental group that received education through interactive videos proving more effective than the control group that received education through conventional videos. Based on these research results, it is recommended that universities adopt this method as part of their mandatory annual training program on hygiene and sanitation for food handlers.

Additional Information: Keamanan pangan ditentukan oleh kebersihan serta penerapan praktik higiene dan sanitasi yang sesuai standar, sehingga diperlukan peningkatan pengetahuan penjamah makanan, salah satunya melalui inovasi edukasi. Media video interaktif melalui platform Edpuzzle dapat menjadi salah satu metode yang menarik untuk meningkatkan pengetahuan penjamah makanan. Penelitian ini bertujuan untuk mengetahui pengaruh edukasi higiene dan sanitasi, serta efektivitas media edukasi terhadap peningkatan pengetahuan penjamah makanan di Kantin Universitas Sultan Ageng Tirtayasa. Penelitian ini menggunakan metode Quasi-experimental design dengan rancangan non-equivalent control group design, dan teknik total sampling pada 53 orang penjamah makanan di kantin Universitas Sultan Ageng Tirtayasa. Pengumpulan data dilakukan menggunakan kuesioner dan dianalisis dengan uji Wilcoxon, Paired T-test, dan uji Mann-Whitney. Hasil penelitian menunjukkan terdapat pengaruh edukasi higiene dan sanitasi media video konvensional dan video interaktif terhadap peningkatan pengetahuan higiene dan sanitasi pada penjamah makanan di Kantin Universitas Sultan Ageng Tirtayasa (p-value < 0,05). Selain itu, terdapat perbedaan efektivitas antar media edukasi dalam meningkatkan pengetahuan penjamah makanan, dan kelompok eksperimen yang diberikan edukasi dengan video interaktif lebih efektif dibandingkan dengan kelompok kontrol yang diberikan edukasi dengan video konvensional. Dengan hasil penelitian tersebut, menyarankan universitas untuk dapat mengadopsi metode ini sebagai bagian dari program pelatihan wajib tahunan mengenai higiene dan sanitasi bagi penjamah makanan.
