Abstract
This study identifies residents of Dalung Village who consume beef and its substitutes, and analyzes the factors influencing their animal protein consumption patterns. Rising beef prices, driven by high production costs and the global food crisis, have encouraged people to shift toward more affordable protein sources. This quantitative descriptive research involved 100 respondents, with data collected through observation, interviews, and questionnaires. The findings indicate that education has a significant positive effect on animal protein consumption patterns, particularly in shaping substitution choices as purchasing power declines. Simultaneously, income, number of family dependents, and education level contribute to variations in consumption patterns within the community. Partially, the education variable (X3) shows a positive and significant influence on the consumption pattern (Y) of animal-based side dishes in Dalung Village. Meanwhile, the simultaneous analysis demonstrates that income (X1), family dependents (X2), and education (X3) collectively affect the community’s animal protein consumption patterns.
