Abstract

This study aims to describe (1) the management of regular culinary training in improving the entrepreneurial skills of trainees at the Regional Job Training Centre (PPKD) South Jakarta 2) the skills of trainees after regular culinary training at PPKD South Jakarta. The research method used in this research is a descriptive research method with a qualitative approach. The data collection techniques used are observation, interview, and documentation. The data sources in this study consisted of 15 people, namely 1 Head of the Training Implementation Unit (Kasatpel), 1 person in charge of training, 2 training instructors, and 11 culinary training participants at PPKD South Jakarta. The results showed that: (1) the stages of regular culinary training management consist of planning, implementation, and evaluation of training; training activities are carried out in a structured manner and in accordance with the rules set by the DKI Jakarta Manpower, Transmigration, and Energy Office and training activities have been carried out optimally with the results of culinary training which show an increase in knowledge, skills, and attitudes of participants after attending culinary training. (2) The entrepreneurial skills of the participants after attending this regular culinary training are that participants gain understanding and skills for entrepreneurship in the field of culinary, as evidenced by some participants who have succeeded in opening a business independently.

Additional Information: Penelitian ini bertujuan untuk mendeskripsikan tentang (1) manajemen pelatihan reguler tata boga dalam meningkatkan keterampilan kewirausahaan peserta pelatihan di Pusat Pelatihan Kerja Daerah (PPKD) Jakarta Selatan 2) keterampilan peserta pelatihan pasca pelatihan reguler tata boga di PPKD Jakarta Selatan. Metode penelitian yang digunakan dalam penelitian ini yaitu metode penelitian dekripstif dengan pendekatan kualitatif. Teknik pengumpulan data yang digunakan yaitu observasi, wawancara, dan dokumentasi. Sumber data dalam penelitian ini terdiri dari 15 orang, yaitu 1 orang Kepala Satuan Pelaksana (Kasatpel) Pelatihan, 1 orang penanggung jawab pelatihan, 2 orang instruktur pelatihan, dan 11 orang peserta pelatihan tata boga di PPKD Jakarta Selatan. Adapun hasil penelitian menunjukkan bahwa: (1) tahapan manajemen pelatihan reguler tata boga terdiri dari perencanaan, pelaksanaan, dan evaluasi pelatihan; kegiatan pelatihan dilakukan secara terstuktur dan sesuai dengan aturan yang telah ditetapkan oleh Dinas Tenaga Kerja, Transmigrasi, dan Energi DKI Jakarta dan kegiatan pelatihan sudah dilakukan secara optimal dengan hasil pelatihan tata boga yang menunjukkan adanya peningkatan pengetahuan, keterampilan, dan sikap peserta setelah mengikuti pelatihan tata boga. (2) keterampilan kewirausahaan peserta setelah mengikuti pelatihan reguler tata boga ini adalah peserta mendapatkan pemahaman dan keterampilan untuk berwirausaha dibidang boga, dibuktikan dengan beberapa peserta yang telah berhasil membuka usaha secara mandiri.
