Abstract

Tea comes from the tea plant (Camellia sinensis). Tea has long been known to all Indonesians. One effort to create renewable innovation is by making water hyacinth tea (Eichhornia crassipes). Water hyacinth has the ability to absorb heavy metals. Since water hyacinth can absorb heavy metals, it is soaked in lime juice solution. Lime (Citrus aurantifolia) contains citric acid, which functions as a heavy metal binding agent. The objective of this study is to determine the best drying method for the characteristics of E. crassipes tea. The research method used was an experimental laboratory study employing a Completely Randomised Design (CRD) consisting of three treatment levels: IC1 (sunlight), IC2 (roasting), and IC3 (oven), each with two replicates. The results of this study indicate that the best drying method was achieved by the IC2 (roasting) treatment, yielding an analysis of 42.8% moisture content, moisture content of 6.33%, ash content of 12.92%, total phenols of 184.4 mg GAE/100 g, hedonic parameter scores of 3.20 (somewhat liked) for colour and 4.00 (liked) for aroma, and a pH of 5.85. Lead (Pb) in fresh E. crassipes leaves 6.473 mg/kg, lead in E. crassipes tea 2.7365 mg/kg, toxicity Brine Shrimp Lethality Test (BSLT) roasting method produced an LC₅₀ value of 88.04 ppm and produced positive tannins.

Additional Information: Teh berasal dari jenis tanaman daun teh (Camellia sinensis). Minuman teh sudah lama dikenal oleh seluruh masyarakat Indonesia. Salah satu upaya untuk menciptakan inovasi terbarukan yaitu dengan membuat teh eceng gondok (Eichhornia crassipes). Eceng gondok memiliki kemampuan menyerap logam berat. Karena eceng gondok mampu meneyerap logam berat maka dilakukan perendaman dengan larutan jeruk nipis. Jeruk nipis (Citrus aurantifolia) memiliki kandungan kimia berupa asam sitrat yang memiliki fungsi sebagai agen pengikat logam berat. Tujuan dari penelitian ini yaitu untuk menentukan metode pengeringan terbaik terhadap karakteristik teh Eichhornia crassipes. Metode penelitian yang dilakukan yaitu bersifat eksperimental laboratorium menggunakan Rancangan Acak Lengkap (RAL) yang terdiri dari 3 taraf perlakuan yaitu IC1 (sinar matahari), IC2 (sangrai) dan IC3 (oven) dengan 2 kali ulangan. Hasil dari penelitian ini menunjukkan bahwa metode pengeringan terbaik dihasilkan oleh perakuan dengan kode IC2 (sangrai) dengan nilai analisis rendemen 42,8%, hasil kadar air 6,33%, kadar abu 12,92%, total fenol 184,4 mg GAE/100 g, nilai hedonik parameter warna mendapat skor 3,20 (agak suka), aroma mendapat skor 4,00 (suka), pH 5,85, timbal (Pb) daun segar E. crassipes 6,473 mg/kg, timbal teh E. crassipes 2,7365 mg/kg, toksitas Brine Shrimp Lethality Test (BSLT) metode sangrai menghasilkan nilai LC₅₀ = 88,04 ppm dan menghasilkan tanin yang positif.
