Abstract

Beneng taro plant originally lived as a wild plant in the forest of Mount Karang Pandeglang which grew very fast, then cultivated by local farmers. The utilization of beneng taro is still focused on the tuber part. Taro beneng leaves have a secondary metabolite compound content. In this research, beneng taro leaves were extracted to explore their functional properties. The purpose of this research is to determine the secondary metabolite compounds and antibacterial activity in taro beneng leaf extracts with different drying temperatures and methods. This research used different drying temperatures on beneng taro leaves, drying at 40°C, 50°C, 60°C, and sunlight. The results of the research showed that the best drying temperature for all responses was drying at 50°C with total flavonoid content of 1.51 mg QE/g extract, total phenol 54.42 mg GAE/g extract, and antioxidant activity of 62.90 ppm. The KHM value on Staphylococcus aureus bacteria with concentrations of 1000 µg/ml, 1500 µg/ml and 2000 µg/ml had the highest average KHM value with 50°C drying of 20.14%; 45.41%; and 58.33%. The KHM value on Escherichia coli bacteria with concentrations of 1000 µg/ml, 1500 µg/ml and 2000 µg/ml has the highest average KHM value with 50°C drying of 15.89%; 39.86%; and 59.83%

Additional Information: Tanaman talas beneng awalnya hidup sebagai tanaman liar di hutan Gunung Karang Pandeglang yang tumbuh sangat cepat, kemudian dibudidayakan oleh petani setempat. Pemanfaatan talas beneng masih terfokus pada bagian umbinya. Daun talas beneng memiliki kandungan senyawa metabolit sekunder. Pada penelitian ini, daun talas beneng diekstraksi untuk dieksplorasi sifat fungsionalnya. Tujuan dari penelitian ini adalah untuk mengetahui kandungan senyawa metabolit sekunder dan aktivitas antibakteri pada ekstrak daun talas beneng dengan suhu dan metode pengeringan yang berbeda. Penelitian ini menggunakan suhu pengeringan yang berbeda pada daun talas beneng, yaitu pengeringan pada suhu 40°C, 50°C, 60°C, dan sinar matahari. Hasil penelitian menunjukkan bahwa suhu pengeringan terbaik untuk semua respon adalah pengeringan pada suhu 50°C dengan kadar flavonoid total 1,51 mg QE/g ekstrak, fenol total 54,42 mg GAE/g ekstrak, dan aktivitas antioksidan 62,90 ppm. Nilai KHM pada bakteri Staphylococcus aureus dengan konsentrasi 1000 µg/ml, 1500 µg/ml dan 2000 µg/ml memiliki nilai KHM rata-rata tertinggi dengan pengeringan 50°C yaitu 20,14%; 45,41%; dan 58,33%.
