Abstract
Soybeans are an agricultural product that is easily damaged, so it requires further processing, one of which is processing soybeans into soy milk. This research aims to describe the process of processing soybeans into soy milk and to analyze the amount of revenue costs and income of household-scale soy milk processing businesses in Cibeber District, Cilegon City. The type of research uses a descriptive quantitative with the research location in Cibeber District, Cilegon City. The research instrument used in this study used a questionnaire with a survey method. The sampling techniques in this study used census method so that the number of samples was 10 entrepreneurs who processing soy milk on a household scale. Analysis of the data used include analysis of cost (fixed costs and variable costs), revenues, and income. The research results show that the process of making soy milk in Cibeber District, Cilegon City consists of 7 stages consisting of, sorting, washing and soaking, then milling, boiling, filtering, heating/pasteurization, and packaging. Based on the results of the analysis, soy milk producers in Cibeber District, Cilegon City, in one month of production require an average of 73.5 kg of soybeans with the price of soybeans being IDR. 14,000/Kg. The total production cost used to process soybeans into soy milk is IDR. 3,564,890 with fixed costs of IDR. 61,015 and variable costs of IDR. 3,503,875. The average income from sales received by soy milk producers is IDR. 7,688,500, so the average net income obtained by soy milk producers is IDR. 4,123,610.

| Additional Information: | Kedelai merupakan produk hasil pertanian yang memiliki sifat yang mudah rusak, sehingga perlu adanya pengolahan lebih lanjut untuk mencegah agar kerusakan tersebut tidak terjadi, salah satunya yaitu mengolah kedelai menjadi susu kedelai. Penelitian ini bertujuan untuk untuk mendeskripsikan bagaimana proses pengolahan kedelai menjadi susu kedelai dan untuk menganalisis berapakah besarnya biaya, penerimaan, dan pendapatan pengolahan susu kedelai skala rumah tangga di Kecamatan Cibeber, Kota Cilegon. Penelitian ini dilakukan di Kecamatan Cibeber Kota Cilegon pada bulan Oktober tahun 2023. Data yang digunakan dalam penelitian ini yaitu data primer yang bersumber dari wawancara langsung dengan pelaku industri rumah tangga pengolahan susu Kecamatan Cibeber dan data sekunder yang diperoleh dari instansi terkait, jurnal, buku atau karya ilmiah yang telah dipublikasikan. Metode analisis data yang yaitu analisis biaya (biaya tetap dan biaya variabel), penerimaan dan pendapatan. Hasil penelitian menunjukkan Proses pembuatan susu kedelai di Kecamatan Cibeber, Kota Cilegon terdiri dari 7 tahapan yang terdiri dari, Sortasi, pencucian dan perendaman, kemudian penggilingan, perebusan, penyaringan, pemanasan/pasteurisasi, dan pengemasan. Berdasarkan hasil analisis, produsen susu kedelai yang ada di Kecamatan Cibeber Kota Cilegon dalam satu bulan produksi rata-rata membutuhkan 73,5 Kg kacang kedelai dengan harga kacang kedelai Rp. 14.000/Kg. Biaya total produksi yang digunakan untuk mengolah kacang kedelai menjadi susu kedelai sebesar Rp. 3.564.890 dengan biaya tetap sebesar Rp. 61.015 dan biaya variabel sebesar Rp. 3.503.875. Penerimaan rata-rata dari hasil penjualan yang diterima oleh produsen susu kedelai Rp. 7.688.500, sehingga rata-rata pendapatan bersih yang diperoleh produsen susu kedelai yaitu sebesar Rp. 4.123.610. | |||||||||
