Abstract

The purpose of this study is to examine the added value and profitability of processed dairy products from Cibugary. The research was conducted from January to March 2024 at Cibugary (Cibubur Garden Dairy) in East Jakarta. This study employs both qualitative and quantitative research methods. Primary data and information were gathered through direct observation and interviews with the owner of Cibubur Garden Dairy. Secondary data were collected from official records of the Agricultural Data and Information Center, along with relevant literature related to the research topic. The research methodology utilized the Hayami Method with a single-process production calculation. Various approaches, such as cost and revenue analysis, Break Even Point (BEP), Margin Of Safety (MOS), and Marginal Income Ratio (MIR), were employed to analyze profitability. The findings reveal that pasteurized milk, yogurt, and mozzarella cheese contribute to added value of Rp 30,068, Rp 39.002, and Rp 7.388 respectively, with value-added ratios of 70.92%, 73,79%, and 52,77%. Among these products, yogurt shows the highest added value, while mozzarella cheese has significantly lower added value compared to the other two products. The profitability of pasteurized milk, yogurt, and mozzarella cheese is 66%, 69%, and 54% respectively. Yogurt dairy products demonstrate higher added value and profitability compared to pasteurized milk and mozzarella cheese. The business efficiency calculation is based on the monthly R/C Ratio in Cibugary for pasteurized milk products, yoghurt and mozzarella cheese, which is 2.94; 3.26; 2.16, where >1 means the processed product business is efficient and feasible to develop.

Berbagai pendekatan seperti analisis biaya dan pendapatan, Titik Impas (BEP), Margin Keamanan (MOS), dan Rasio Pendapatan Marginal (MIR) digunakan untuk menganalisis profitabilitas. Temuan penelitian mengungkapkan bahwa susu pasteurisasi, yogurt, dan keju mozzarella memberikan nilai tambah sebesar Rp 30.068, Rp 39.002, dan Rp 7.388 masing-masing, dengan rasio nilai tambah sebesar 70,92%, 73,79%, dan 52,77%. Di antara produk-produk ini, yogurt menunjukkan nilai tambah tertinggi, sedangkan keju mozzarella memiliki nilai tambah yang jauh lebih rendah dibandingkan dengan dua produk lainnya. Profitabilitas susu pasteurisasi, yogurt, dan keju mozzarella masing-masing adalah 66%, 69%, dan 54%. Produk susu yogurt menunjukkan nilai tambah dan profitabilitas yang lebih tinggi dibandingkan susu pasteurisasi dan keju mozzarella. Perhitungan efisiensi usaha didasarkan pada Rasio R/C bulanan di Cibugary untuk produk susu pasteurisasi, yogurt, dan keju mozzarella, yaitu 2,94; 3,26; 2,16, di mana >1 berarti bisnis produk olahan efisien dan layak untuk dikembangkan.
