This is exemplified by UMKM Bolu Pisang Ibu Onih, which relies on ambon lumut banana as its key ingredient. Throughout its operation, this business has faced challenges resulting in financial losses due to an overstock of raw materials and spoilage. The purpose of this research was to identify the ideal quantity of ambon lumut banana raw material inventory and the optimal ordering frequency to reduce losses and enhance operational efficiency at UMKM Bolu Pisang Ibu Onih. The approach to data analysis employed was the Economic Order Quantity (EOQ) model, supplemented by calculations for Safety Stock, derived from the operational information of the business over the course of a year. The findings indicated that utilizing EOQ, the ideal quantity of raw materials that UMKM Bolu Pisang Ibu Onih should procure amounts to 371 kg for each order, with a frequency of 91 orders annually. The necessary safety stock for the raw materials stands at 285 kg. By applying the EOQ model, UMKM Bolu Pisang Ibu Onih realizes a cost reduction of Rp 3.761.468 in inventory expenses.
