This study aimed to obtain the optimal yield of anthocyanin fractions from red dragon fruit peel (Hylocereus polyrhizus), design the synthesis of purified anthocyanins, and produce an anthocyanin nanoemulsion. Extraction was carried out using the ultrasound-assisted extraction (UAE) method with sonication time variations of 3 × 10 minutes, 3 × 15 minutes, and 3 × 20 minutes. The results showed that the 3 × 15-minute sonication produced the highest yield at 19.69%, indicating optimal efficiency in extracting active compounds. The process was followed by multistep purification to obtain purified anthocyanins, which were then formulated into a nanoemulsion. Microscopic characterization revealed an average droplet size of 65.249 nm, which exceeds the ideal nanoemulsion size range (20–200 nm), indicating that the system formed is still classified as a microemulsion.
