description: UMKM Kerupuk Kulit Berkah is a business engaged in the production of beef skin crackers, through the stages of slicing, boiling, cutting, drying, and frying. However, in carrying out its operations, this SME’s still faces challenges in terms of production process efficiency. This study aims to identify sustainability performance indicators from economic, environmental, and social aspects, and calculate the efficiency value of each indicator using the Sustainable Value Stream Mapping (Sus-VSM) method. The results show that product quality indicators are still below target, with a product defect rate of 3.6% and time efficiency reaching only 54%. Water consumption efficiency was recorded at 51%, energy consumption at 5.12 kWh/kg, and liquid waste at 21.8 L/kg. On the social side, employee health efficiency reached 91%, but the highest Physical Load Index (PLI) value of 28.8 indicates moderate physical workloads. Based on the evaluation results, the recommended improvements include enhancing worker training and using modified ovens as an alternative to sun-drying, as well as implementing a sustainable liquid waste management system.
