To address this issue, edible films offer a promising alternative as safe, consumable, and environmentally friendly packaging. In this study, edible films were developed using durian peel cellulose, carboxymethyl cellulose (CMC), glycerol, and starfruit (Averrhoa bilimbi) extract as an antibacterial agent. The objective of this research was to determine the optimal formulation of durian peel cellulose, CMC, glycerol, and ethanol extract of starfruit to produce an eco-friendly antibacterial edible film, and to analyze its characteristics, morphology, and mechanical properties. The research began with the isolation and characterization of durian peel cellulose, followed by the preparation of antibacterial edible films and evaluation of their properties. These evaluations included tensile strength and elongation at break tests, water vapor transmission rate analysis, characterization using SEM and FTIR, and antibacterial activity assays. The optimal antibacterial edible film formulation was achieved using a composition of 0.5 g cellulose, 1.25 g CMC, and 0.75 mL glycerol, resulting in an edible film that met the packaging material standards set by the Japan Industrial Standard (JIS). However, no antibacterial activity was observed in the resulting edible film.
