This study explored the development of a coating based of using various concentrations of cellulose nanocrystal (CNC) derived from banana stem waste and various treatments of coating layer for paper-based packaging. Banana stem waste, an abundant and underutilized agricultural by-product, was subjected to chemical and mechanical processes to extract CNC. The CNC coating was applied to the surface of kraft papers, which then the physical properties such as thickness, grammage, water contact angle, diffusivity, permeability, and surface smoothness were characterized. The selected coated paper was characterized with FTIR, SEM, and tested specifically as a white bread packaging material, with assessments of its effectiveness in preserving shelf life compared to conventional plastic packaging. The characterized paper results indicated that the thickness ranged from 0,25 to 0,33 mm. The grammage ranged from 90,00 to 95,80 g/m2. The water contact angle ranged from 50,36 to 95,76o. The diffusivity ranged from 0,02 to 0,45 cm/s. The permeability ranged from 2,59 to 60,12 CU. The surface smoothness ranged from 2,62 to 4,59 Bekk. The optimal treatment was determined to be the 0,2% concentration of CNC followed by the PVA coating+CNC based coating layers. Yeast and mold count (YMC) varied between 3,13 and 5,15 Log (CFU/g) and the selected treatment resulted in decreasing amount of white bread’s YMC from original control paper. FTIR spectrum of paper with selected treatment showed peaks with higher intensity.
