However, the high demand, which is not matched by an adequate supply often leads to scarcity and price increases in the market. This condition highlights the need to understand the factors influencing the demand for shallots. This study aimed to identify consumer characteristics, analyze the factors influencing demand, and determine the dominant factors affecting the demand for shallots in Serang City. The research was conducted at Rau Market using a descriptive quantitative approach. The location was selected purposively because it is a central market for shallot sales. Data were collected through accidental sampling of 97 consumers and analyzed using the Cobb-Douglas. The results showed that, partially, price did not affect the demand for shallots, while income and the number of family members did. Simultaneously, price, income, and the number of family members had a significant effect on the demand for shallots at Rau Market in Serang City.
