"Tomatoes are climacteric fruits, meaning they have a short shelf life and only yield a single harvest per growing season. The freshness of the harvested fruit can be maintained temporarily, because the metabolism in the fruit is still running well. An effective way to prevent fruit damage is by using edible coating. Another effort to maintain the freshness of tomatoes is to pay attention to their storage. During storage, temperature also plays a major role in the storage life of tomatoes. The primary goal of this research is to analyze the shelf life performance of tomatoes (lycopersicum esculentum Mill.) and the role of cassava starch concentration as a base material for edible coating and storage temperature. This study was conducted in September 2024 at the Lab. of Plant Physiology and Biotechnology, Faculty of Agriculture, Sultan Ageng Tirtayasa University, Serang Regency, Banten. A Factorial Split-Plot Design was utilized in this experiment. It involved two factors and was conducted with three replications.The first factor is the concentration of cassava starch with three levels (1.5%, 3%, 4.5%) and the second factor is the storage temperature which is divided into two types, namely room temperature (25oC - 30oC) and low temperature (10oC - 15oC). Each replication consists of 4 tomatoes so that the number of tomatoes used is 96. The observed parameters involved weight lossfruit hardness, total dissolved solids, pH, and vitamin C. Observations were carried out every 2 days for 14 days after the tomatoes were placed in storage. The findings indicated a substantial impact on weight loss when an edible coating of 3% cassava starch was applied. The concentration of cassava starch of 1.5% also gave significantly different results on the fruit hardness parameter of 0.58 N and vitamin C of 42.42%.
