Fisheries. Angling description: Tea comes from the tea plant (Camellia sinensis). Tea has long been known to all Indonesians. One effort to create renewable innovation is by making water hyacinth tea (Eichhornia crassipes). Water hyacinth has the ability to absorb heavy metals. Since water hyacinth can absorb heavy metals, it is soaked in lime juice solution. Lime (Citrus aurantifolia) contains citric acid, which functions as a heavy metal binding agent. The objective of this study is to determine the best drying method for the characteristics of E. crassipes tea. The research method used was an experimental laboratory study employing a Completely Randomised Design (CRD) consisting of three treatment levels: IC1 (sunlight), IC2 (roasting), and IC3 (oven), each with two replicates. The results of this study indicate that the best drying method was achieved by the IC2 (roasting) treatment, yielding an analysis of 42.8% moisture content, moisture content of 6.33%, ash content of 12.92%, total phenols of 184.4 mg GAE/100 g, hedonic parameter scores of 3.20 (somewhat liked) for colour and 4.00 (liked) for aroma, and a pH of 5.85.
