The problem often arised with brown sugar contained impurities which caused high water content and the color would be darker. One of the solutions to problem was purification using centrifugation. The aim of this research was to determine the effect of the centrifugator rotation speed, time of centrifugation, and their interaction affected to the physical and chemical characteristics of sap and brown sugar. The design used was a completely randomized split plot with two factors, the first factor was the centrifugator rotation speed (5.000 and 10.000 rpm) as the main plot, the second factor was the time of centrifugation (15 and 30 minutes) as a subplot. The speed and time of sap significantly affected the parameters of yield, density, turbidity, L*, b*, chroma, browning index, viscosity, reducing sugars, non-reducing sugars, and total sugars. The interaction between rotational speed and centrifugation time of sap significantly affected the parameters of yield, turbidity, L*, and viscosity. The rotational speed and centrifugation time significantly affected the yield, color (L*, a*, b*, chroma, browning index), solubility time, water activity (Aw), bulk density, compressed density, reducing sugars, non-reducing sugars, total sugars, moisture content, and ash content of sorghum brown sugar.
