Talas beneng merupakan pangan penghasil karbohidrat yang dapat dimanfaatkan sebagai sumber pangan utama. Umumnya umbi talas beneng dapat dipanen pada umur 8-12 bulan. Akan tetapi, karena daunnya dapat dimanfaatkan sebagai pengganti tembakau. Oleh karena itu, umur panen umbi talas beneng diundur menjadi 24 bulan. Penelitian ini bertujuan untuk mengetahui pengaruh perbedaan umur panen terhadap karakteristik fisikokimia talas beneng dan tepungnya. Variabel yang digunakan adalah umur panen talas beneng yang dibagi menjadi empat taraf yaitu (6, 12, 18, dan 24 bulan). Hasil penelitian menunjukkan bahwa perbedaan umur panen talas beneng mempengaruhi L*, a*, b*, º Hue, derajat putih, bobot, diameter, dan panjang. Sementara itu, perbedaan umur panen tepung talas beneng mempengaruhi nilai L*, a*, b*, ºHue, tingkat putih, rendemen, kadar air, kadar abu, kadar protein, kadar pati, amilosa, amilopektin, serat kasar, total karoten, dan gula reduksi. abstract: One way to reduce dependence on rice was to diversify food by utilizing other strategic commodities such as tubers, one of which was beneng taro. Beneng taro was a carbohydrate-producing food that can be used as a primary food source. Generally, beneng taro tubers can be harvested at the age of 8-12 months. However, because the leaves can be used as a substitute for tobacco. Therefore, the harvest age of beneng taro tubers has been delayed to 24 months. This study aimed to determine the effect of differences in harvest age on the physicochemical characteristics of beneng taro and its flour. The variable used was the harvest age of beneng taro which was divided into four levels, namely (6, 12, 18, and 24 months). The results showed that differences in the harvest age of beneng taro affected L *, a *, b *, º Hue, degree of whiteness, weight, diameter, and length.
