description: One way to reduce dependence on rice was to diversify food by utilizing other strategic commodities such as tubers, one of which was beneng taro. Beneng taro was a carbohydrate-producing food that can be used as a primary food source. Generally, beneng taro tubers can be harvested at the age of 8-12 months. However, because the leaves can be used as a substitute for tobacco. Therefore, the harvest age of beneng taro tubers has been delayed to 24 months. This study aimed to determine the effect of differences in harvest age on the physicochemical characteristics of beneng taro and its flour. The variable used was the harvest age of beneng taro which was divided into four levels, namely (6, 12, 18, and 24 months). The results showed that differences in the harvest age of beneng taro affected L *, a *, b *, º Hue, degree of whiteness, weight, diameter, and length. Meanwhile, differences in the harvest age of Beneng taro flour affect the values of L*, a*, b*, ºHue, whiteness level, yield, water content, ash content, protein content, starch content, amylose, amylopectin, crude fiber, total carotene, and reducing sugar.
