In this study, red palm oil, as the sourches of beta carotene, rich in beta carotene and soy lecithin was added to the yoghurt drink. Beta carotene is a carotenoid that could acts as a provitamin-A and antioxidant while. Soy lecithin acts as an emulsifier a stabilizer. The purpose of this study was to determine the effect of the use of red palm oil and soy lecithin on the physical, chemical, and microbiological characteristics of yoghurt drinks. The method used in this study was a completely randomized design with two factors. The first factor was the concentration of red palm oil, which consists of 0%; 0.3%; 0.5%. While the second factor was the concentration of soy lecithin, which consists of 0%; 1%; 2%.
