Berdasarkan wawancara dengan pemilik UMKM Tahu Dakim Jaya, proses produksinya masih ditemukan banyak produk cacat, dengan persentase produk tahu cacat yang dihasilkan selama bulan Desember 2023 sampai bulan Januari 2024 pada UMKM Tahu Dakim Jaya mencapai 2% sampai 3% setiap harinya. Berdasarkan hasil observasi, pada UMKM Tahu Dakim Jaya juga ditemukan beberapa pemborosan, seperti overproduction, defect, motion, waiting, transportation, dan overprocessing. Pemborosan dominan terjadi pada pemborosan defect. Penelitian ini bertujuan untuk mengendalikan mutu produk tahu dengan metode lean six sigma. Berdasarkan hasil penelitian, dari hasil kuesioner seven waste menunjukkan bahwa waste dominan terjadi pada waste defect, terdapat 5 CTQ yaitu cacat kotor, cacat belah, cacat berlubang, cacat ukuran dan cacat warna. Berdasarkan current state VSM diperoleh bahwa lead time yang diperlukan pada produksi tahu di UMKM Tahu Dakim Jaya yaitu sebesar 9 jam 50 menit, sedangkan total value added time sebesar 7 jam 49 menit. Nilai DPMO pada UMKM Tahu Dakim Jaya adalah 5605,3131 dan nilai sigma UMKM Tahu Dakim Jaya adalah sebesar 4,0364 yang artinya bahwa UMKM Tahu Dakim Jaya termasuk rata-rata industri USA. Faktor yang dominan berisiko menyebabkan jenis kecacatan potensial berdasarkan nilai RPN yaitu lama perebusan kedelai dengan nilai RPN sebesar 150, lama perendaman nilai RPN sebesar 125 dan lama pewarnaan nilai RPN sebesar 125. Usulan perbaikan dilakukan dengan menggunakan action planning FMEA, perancangan eksperimen dan future state VSM. Pada usulan action planning FMEA berkaitan dengan pengurangan durasi perebusan, peningkatan durasi perendaman dan pewarnaan, penggunaan timer, pelatihan pada pekerja, pengecekan kedelai, penetapan SOP jadwal rutin pemeliharaan mesin dan pembersihan lingkungan produksi. Penerapan usulan perbaikan dengan perancangan eksperimen yaitu dengan mengatur setting waktu perendaman kedelai sebesar 4 jam, waktu perebusan kedelai sebesar 30 menit dan lama pewarnaan sebesar 2 jam. Process Cycle Efficiency pada kondisi usulan sebesar 92,57%. Pada future state VSM diperoleh lead time sebesar 10 jam 25 menit 30 detik dengan VA time sebesar 9 jam 39 menit sehingga usulan perbaikan dapat lebih menguntungkan UMKM Tahu Dakim Jaya. Persentase cacat produk tahu setelah mengimplementasikan rancangan perbaikan desain eksperimen di UMKM Tahu Dakim Jaya yaitu sebesar 0,32% dari yang sebelumnya sebesar 2,13%. abstract: UMKM Tahu Dakim Jaya is one of the UMKMs engaged in the food industry, specializing in tofu production. According to an interview with the owner of UMKM Tahu Dakim Jaya, the production process still exhibits a significant amount of defective products, with the percentage of defective tofu produced from December 2023 to January 2024 reaching 2% to 3% daily. Observations also revealed several types of waste in UMKM Tahu Dakim Jaya, including overproduction, defects, motion, waiting, transportation, and overprocessing. The predominant waste is defects. This study aims to control the quality of tofu products using the Lean Six Sigma method. Based on the research, the results from the seven waste questionnaire indicate that the dominant waste is defect waste, with five Critical to Quality (CTQ) factors identified: dirty defects, splitting defects, hole defects, size defects, and color defects. Based on the current state of VSM, it is found that the lead time required for tofu production at Tahu Dakim Jaya MSMEs is 9 hours 50 minutes, while the total value added time is 7 hours 49 minutes. The DPMO value for Tahu Dakim Jaya MSMEs is 5605.3131 and the sigma value for Tahu Dakim Jaya MSMEs is 4.0364, which means that Tahu Dakim Jaya MSMEs are among the average for the USA industry. The dominant factors at risk of causing potential defects based on the RPN value are the length of boiling soybeans with an RPN value of 150, the soaking time with an RPN value of 125 and the coloring time with an RPN value of 125. Proposed improvements are carried out using action planning FMEA, experimental design and future state VSM . The proposed FMEA action planning relates to reducing the duration of boiling, increasing the duration of soaking and coloring, using timers, training workers, checking soybeans, establishing SOPs for routine machine maintenance schedules and cleaning the production environment. Implementation of the proposed improvements by designing experiments is by setting the soaking time for the soybeans to 4 hours, the boiling time for the soybeans to 30 minutes and the coloring time to 2 hours. Process Cycle Efficiency in the proposed conditions is 92.57%. In the VSM future state, the lead time is obtained at 10 hours 25 minutes 30 seconds with a VA time of 9 hours 39 minutes so that the proposed improvements can be more profitable for Tahu Dakim Jaya MSMEs.
