Abstract

Fish Oil Of Sardines is a byproduct of the canning industry and flouring lemuru are numerous in the area Muncar East Java. Effectiveness and efficiency in the transport of fish oil sometimes makes oil more easily oxidised, so difficult in storage. One effort to facilitate handling is by trapping the fish oil with the coating material, The process is termed microencapsulation. This study aims to determine the best formulation combination of sodium alginate and CaCl in the preliminary study and determine the best formulation of sodium alginate coating using microencapsulation techniques. This research was conducted in July 2013 to March 2014 at the Center for Research and Development Product Processing and Biotechnology Marine and Fisheries, Jakarta Center and the Center for Agro Industry (BBIA) Bogor. The treatment is given in the preliminary study that the concentration of sodium alginate as a coating and CaCl 2 2 as a hardener with the gel strength testing. The main study consists of 15 component formulation with sodium alginate, CaCl , GDL, water, and fish oil. Based on the results of testing including analysis of yield, comparative coating material, microencapsulation efficiency, emulsion stability, chemical analysis (water content , levels of CaCl 2 , and fat content), microbiological analysis. Preliminary observations indicate that treatment with selected formulations were analyzed based on the average value of the highest concentrations of 1% sodium alginate and CaCl 1,5% with an average value of 471,59 g/cm 2 2 , Sodium alginate concentration of 1,25% and 1,5% CaCl at 633,40 g/cm 2 and Sodium alginate concentration of 1,5% and 0,9% CaCl amounted to 1102,2 g/cm 2 . The main research results indicate that the formulation is a formulation selected A3 (Sodium alginate 1%, fish oil 20 mL, CaCl 1,5%, water 60 mL, and 0,0534 g GDL ) with yield of 43,09%, the ratio of coating material 75,66%, microencapsulation efficiency of 21,7%, 14,46% emulsion stability. The water content of 0,002% , CaCl content of 2296 g, fat 3,4% and Total Plate Count ( ALT ) < 2,5 x 10 2 2 colonies/g. Formulation chosen in this study is the formulation A3 .
