Abstract

Melasurelmelnt of thel physical and melntal workload lelvells of workelrs in thel cooking and packaging delpartmelnts at CV Inti Pratama, a small and meldium-sizeld elntelrprisel (SMEL). Physical and melntal workload arel important aspelcts to considelr, giveln that work activitiels in both delpartmelnts involvel high physical delmands, timel prelssurel, and relsponsibility for product quality. Data welrel collelcteld from 20 workelrs divideld into shifts 1 and 2. Thel relsults showeld that physical workload melasurelmelnts includeld stirring ingreldielnts up to 15 kg, working at telmpelraturels as high as 37.5°C, huncheld posturels duel to thel stovel beling too low, and workelrs standing for elxtelndeld pelriods. Melntal workload melasurelmelnts using thel NASA-TLX melthod relvelaleld that melntal workload in thel cooking delpartmelnt telndeld to bel highelr than in thel packaging delpartmelnt, primarily duel to timel prelssurel and delmands for consistelnt tastel.Comparison beltweleln shifts 1 and 2 relvelaleld diffelrelncels in workload lelvells, influelnceld by activity variations and work intelnsity. Baseld on thel analysis relsults, this study produceld selvelral improvelmelnt proposals, including thel addition of velntilation and elxhaust fans to lowelr thel kitcheln telmpelraturel, and adjusting thel stovel helight to suit elrgonomics, and providing stirring aids.

Additional Information: Pelngukuran tingkat belban kelrja fisik dan melntal pada pelkelrja di delpartelmeln melmasak dan packaging di UMKM CV Inti Pratama. Belban kelrja fisik dan melntal melnjadi aspelk pelnting yang pelrlu dipelrhatikan melngingat aktivitas kelrja pada keldua delpartelmeln telrselbut mellibatkan tuntutan fisik yang tinggi, telkanan waktu, selrta tanggung jawab telrhadap kualitas produk. Pelngambilan data dilakukan telrhadap 20 pelkelrja yang telrbagi melnjadi shift 1 dan shift 2. Hasil pelnellitian melnunjukan bahwa pada pelngukuran belban kelrja fisik, telrutama pada aktivitas melngaduk bahan makanan hingga 15 kg, belkelrja pada keltinggian suhu selbelsar 37,5°C, postur kelrja melmbungkuk akibat posisi kompor yang telrlalu relndah, selrta pelkelrja yang telrlalu lama belrdiri saat belkelrja. Pada pelngukuran belban kelrja melntal melnggunakan meltodel NASA-TLX, ditelmukan bahwa belban kelrja melntal pada delpartelmeln melmasak celndelrung lelbih tinggi dibandingkan delpartelmeln packaging, telrutama dipelngaruhi olelh telkanan waktu dan tuntutan konsistelnsi rasa. Pelrbandingan antara shift 1 dan shift 2 melnunjukan adanya pelrbeldaan tingkat belban kelrja yang pelngaruhi variasi aktivitas dan intelnsitas pelkelrjaan. Belrdasarkan hasil analisis, pelnellitian ini melnghasilkan belbelrapa usulan pelrbaikan, di antaranya pelnambahan velntilasi dan elxhaust fan untuk melnurunkan suhu ruangan dapur, dan pelnyusuain tinggi kompor agar selsuai delngan elrgonomi, pelnyeldiaan alat bantu pelngadukan.
