Abstract

The production of leather crackers is a business activity that plays an important role in supporting the MSME economy. However, its implementation is not free from various risks that arise along the supply chain, starting from raw material procurement to product distribution to customers. Berkah MSME, as a leather cracker producer, faces several challenges, including an unstable supply of raw cowhide, variations in raw material quality, limited storage facilities, and fluctuations in market demand, all of which have the potential to disrupt the production process and affect the quality of the final product.Several risk events that have occurred include instability in the supply of raw cowhide, raw materials that do not meet quality standards, and customer complaints resulting from inconsistent product quality. Therefore, systematic identification, analysis, and the development of appropriate risk mitigation strategies are required to minimize the impact of potential losses.This study aims to identify risk events and risk sources within the leather cracker production supply chain and to formulate risk mitigation action proposals using the House of Risk (HOR) method. Based on the research results, 34 risk events and 22 risk sources were identified, with 6 priority risk sources requiring immediate attention. From these priority risk sources, 10 mitigation action proposals were generated, which are expected to reduce risk levels and enhance the resilience of the Berkah MSME supply chain.

Additional Information: Produksi kerupuk kulit merupakan salah satu kegiatan usaha yang memiliki peran penting dalam mendukung perekonomian UMKM, namun dalam pelaksanaannya tidak terlepas dari berbagai risiko yang muncul sepanjang aktivitas rantai pasok, mulai dari pengadaan bahan baku hingga distribusi produk kepada pelanggan. UMKM Berkah sebagai pelaku usaha kerupuk kulit menghadapi sejumlah permasalahan, seperti ketidakstabilan pasokan bahan baku, variasi kualitas kulit sapi, keterbatasan fasilitas penyimpanan, serta fluktuasi permintaan pasar yang berpotensi mengganggu kelancaran proses produksi dan kualitas produk akhir. Beberapa kejadian risiko yang telah terjadi antara lain ketidakstabilan pasokan bahan baku kulit sapi, bahan baku yang diterima tidak memenuhi standar kualitas, serta komplain pelanggan akibat kualitas produk yang tidak konsisten. Oleh karena itu, diperlukan identifikasi, analisis, dan penyusunan strategi mitigasi risiko secara sistematis untuk meminimalkan dampak kerugian yang mungkin timbul. Penelitian ini bertujuan untuk mengidentifikasi kejadian risiko dan sumber risiko pada rantai pasok produksi kerupuk kulit serta merumuskan usulan aksi mitigasi risiko menggunakan metode House of Risk (HOR). Berdasarkan hasil penelitian, teridentifikasi sebanyak 34 kejadian risiko dan 22 sumber risiko, dengan 6 sumber risiko prioritas yang memerlukan penanganan segera. Dari sumber risiko prioritas tersebut, dihasilkan 10 usulan aksi mitigasi yang diharapkan mampu mengurangi tingkat risiko dan meningkatkan ketahanan rantai pasok UMKM Berkah.
