Abstract
Cooking oil that is used repeatedly at high temperatures willreduce the quality of the cooking oil, because it will trigger the process ofhydrolysis and oxidation which will change the characteristics of the oil, such as an increase infree fatty acid content and a change in oil color. The purification of used cooking oilcan be done physically and chemically or alternately. Physically, it can be done using natural absorbents such as bentonite or charcoal, where bentoniteor carbon charcoal are materials that chemically have a large enough surface areato be used in the adsorption process. Chemically, withalkali, sodium hydroxide (NaOH) can be used. This oil purification iscarried out in three stages, namely despicing, neutralizing, and bleaching.This study aims to determine the optimum conditions for adding carboncharcoal and bentonite in the bleaching process of used cooking oil purificationusing a Vigrek column. The results of the used cooking oil purification studyunder optimum conditions, namely with a NaOH concentration of 15%, a temperature of 40ᴼCwith stirring, and a charcoal mass percentage of 70% with a free fatty acidcontent (FFA) of 0.28% w/w, a color number of 3.127 abs, a moisture content of 6.8%, a density of892 kg/m3, and viscosity of 0.02857 N/m3. | Additional Information: | Minyak goreng yang digunakan berulang kali pada temperatur tinggi akan menurunkan kualitas minyak goreng, karena akan memicu terjadinya proses hidrolisis dan oksidasi yang akan merubah karakteristik minyak, seperti kenaikan kadar asam lemak bebas dan perubahan warna minyak. Pemurnian minyak jelantah dapat dilakukan secara fisika dan kimia atau secara bergantian. Secara fisika dapat menggunakan absorben bahan alam seperti bentonit atau arang, dimana bentonit atau arang karbon merupakan bahan yang secara kimia memiliki luas permukaan yang cukup besar untuk digunakan dalam proses adsorpsi. Secara kimia dengan alkali dapat menggunakan Natrium Hidroksida (NaOH). Pemurnian minyak ini dilakukan dengan tiga tahapan yaitu despicing, neutralizing dan bleaching. Penelitian ini bertujuan untuk menentukan kondisi optimum penambahan arang karbon dan bentonit pada proses bleaching pemurnian minyak jelantah dengan menggunakan alat berupa kolom Vigrek. Hasil penelitian pemurnian minyak jelantah pada kondisi optimum yaitu dengan konsentrasi NaOH 15%, suhu 40ᴼC dengan pengadukan, dan persen massa arang yaitu 70% dengan kandungan asam lemak bebas (FFA) 0,28 % b/b, bilangan warna 3,127 abs, kadar air 6,8%, densitas 892 kg/m3 , dan viskositas 0.02857 N/m3 .
