Abstract
Beneng taro leaves are a local food source that has not been widely utilized. However, the productivity value of Beneng taro leaves is high enough as an export commodity. Leaf age and curing temperature are factors that need to be considered to see the interaction between the two factors so as to create beneng taro leaves with characteristics that meet the standards. This study aimed to determine the effect of leaf age, curing temperature and to determine the interaction between leaf age and curing temperature on physicochemical characteristics. This study used the Factorial Randomized Block Design (RBD) method which consisted of two factors. The first factor was leaf age which consisted of three levels, 2, 4, and 6 months. The second factor was curing temperature which consisted of three levels, 30, 35, and 40oC. Each treatment was replicated three times. The results of the study showed that the age of the beneng taro leaves and the wilting temperature had a very significant effect on all parameters, namely water content, color, reducing sugar, chlorophyll, total phenol, and antioxidants, while the interaction between the two factors had a very significant effect on the parameters of water content, brightness (L*), chromaticity a*, chromaticity b*, ohue, reducing sugar, chlorophyll b, total chlorophyll, total phenol, and antioxidants, while chlorophyll a had a significant effect.

| Additional Information: | Daun talas beneng merupakan sumber pangan lokal yang belum banyak dimanfaatkan. Namun, nilai produktivitas daun talas beneng cukup tinggi sebagai komoditas ekspor. Umur daun dan suhu pemeraman merupakan faktor yang perlu diperhatikan untuk melihat interaksi antara kedua faktor tersebut sehingga tercipta daun talas beneng dengan karakteristik yang memenuhi standar. Penelitian ini bertujuan untuk mengetahui pengaruh umur daun, suhu pemeraman dan untuk mengetahui interaksi antara umur daun dan suhu pemeraman terhadap karakteristik fisikokimia. Penelitian ini menggunakan metode Rancangan Acak Kelompok (RAK) Faktorial yang terdiri dari dua faktor. Faktor pertama adalah umur daun yang terdiri dari tiga taraf, 2, 4, dan 6 bulan. Faktor kedua adalah suhu pemeraman yang terdiri dari tiga taraf, 30, 35, dan 40oC. Setiap perlakuan diulang sebanyak tiga kali. Hasil penelitian menunjukkan bahwa umur daun talas beneng dan suhu layu memberikan pengaruh sangat nyata terhadap semua parameter yaitu kadar air, warna, gula reduksi, klorofil, total fenol, dan antioksidan, sedangkan interaksi kedua faktor tersebut memberikan pengaruh sangat nyata terhadap parameter kadar air, kecerahan (L*), kromatisitas a*, kromatisitas b*, ohue, gula reduksi, klorofil b, total klorofil, total fenol, dan antioksidan, sedangkan klorofil a memberikan pengaruh nyata. | ||||||||||||
