Abstract
This research aimed to determine the best harvest age and drying temperature to prevent damage to the physical properties and chemical content of butterfly pea flowers (Clitoria ternatea L.). A quantitative method in a form of Split-Plot Design was applied in this study to discover specific results. This study investigated the effects of two factors, harvest age and drying temperature. The first factor was tested at three levels i.e. 16, 17, and 18 weeks after planting (WAP). Then, the second factor was also tested at three levels: 30, 50, and 70°C. Several data analysis in this research consisted of plant height, number of leaves, number of flowers, flower yield, water activity, moisture content, color, and antioxidant activity. This study showed that the harvest age of 18 WAP and the drying temperature of 50ºC was significant in this research. Additionally, there was an interaction between harvest age and drying temperature for the butterfly pea flowers. The results of the study showed that harvest age affected yield and water activity. While drying temperature significantly influenced moisture content, yield, water activity, and antioxidant activity. With an interaction between harvest age and drying temperature observed in the water activity and a* color parameter of butterfly pea flowers.

| Additional Information: | Penelitian ini bertujuan untuk menentukan umur panen dan suhu pengeringan terbaik untuk mencegah kerusakan pada sifat fisik serta kandungan kimia bunga telang (Clitoria ternatea L.). Metode kuantitatif dengan Rancangan Petak Terbagi (Split-Plot Design) digunakan dalam penelitian ini untuk memperoleh hasil yang spesifik. Penelitian ini mengkaji pengaruh dua faktor, yaitu umur panen dan suhu pengeringan. Faktor pertama diuji pada tiga taraf, yaitu 16, 17, dan 18 minggu setelah tanam (MST). Kemudian, faktor kedua juga diuji pada tiga taraf, yaitu 30, 50, dan 70°C. Beberapa analisis data dalam penelitian ini meliputi tinggi tanaman, jumlah daun, jumlah bunga, hasil bunga, aktivitas air, kadar air, warna, dan aktivitas antioksidan. Hasil penelitian menunjukkan bahwa umur panen 18 MST dan suhu pengeringan 50°C memberikan pengaruh signifikan dalam penelitian ini. Selain itu, terdapat interaksi antara umur panen dan suhu pengeringan pada bunga telang. Hasil penelitian memperlihatkan bahwa umur panen berpengaruh terhadap hasil dan aktivitas air. Sedangkan suhu pengeringan berpengaruh signifikan terhadap kadar air, hasil, aktivitas air, dan aktivitas antioksidan. Interaksi antara umur panen dan suhu pengeringan juga diamati pada aktivitas air dan parameter warna a* bunga telang. | |||||||||
