Abstract

This study aims to analyze the added value generated from processing melinjo peel (commonly known as tangkil peel) into sponge cake at Mirah Cookies, a home-based small business located in Serang City, Banten. The specific objectives of this study are: (1) to analyze the total production cost incurred in a single production cycle of melinjo peel sponge cake; (2) to analyze the revenue and profit obtained from the sale of the product; and (3) to analyze the added value resulting from the processing of melinjo peel into sponge cake. This research is a quantitative study with a descriptive approach. The analytical tools used include calculations of production costs, revenue, and profit, as well as the Hayami method to analyze added value. The research was conducted from October 2024 to May 2025 at UMKM Mirah Cookies, located on Jl. Ahmad Yani Asem Gede, Serang District, Serang City, Banten Province. The results showed that the total monthly production cost of melinjo peel sponge cake was Rp. 1.962.574, consisting of fixed costs of Rp. 721.024 and variable costs of Rp. 1.241.550. The monthly revenue obtained from product sales was Rp. 2.400.000, resulting in a profit of Rp. 437.426. The added value generated from processing melinjo peel into sponge cake was Rp. 216.409 with an added value ratio of 54,10%. This indicates that the business activity falls into the high added value category.

Additional Information: Penelitian ini bertujuan untuk menganalisis nilai tambah yang dihasilkan dari pengolahan kulit melinjo (yang umum dikenal sebagai kulit tangkil) menjadi bolu pada usaha rumahan Mirah Cookies yang berlokasi di Kota Serang, Banten. Tujuan khusus dari penelitian ini adalah: (1) menganalisis total biaya produksi bolu kulit melinjo dalam satu bulan; (2) menganalisis penerimaan dan keuntungan yang diperoleh dari penjualan bolu kulit tangkil; dan (3) menganalisis nilai tambah yang dihasilkan dari pengolahan kulit melinjo menjadi bolu. Penelitian ini merupakan penelitian kuantitatif dengan pendekatan deskriptif. Alat analisis yang digunakan meliputi perhitungan biaya produksi, penerimaan, dan keuntungan, serta metode Hayami untuk menganalisis nilai tambah. Penelitian dilaksanakan dari bulan Oktober 2024 hingga Juni 2025 di UMKM Mirah Cookies yang beralamat di Jl. Ahmad Yani Asem Gede, Kecamatan Serang, Kota Serang, Provinsi Banten. Hasil penelitian menunjukkan bahwa biaya produksi bolu kulit melinjo dalam sebesar Rp1.962.574/bulan yang terdiri dari biaya tetap sebesar Rp721.024 dan biaya variabel sebesar Rp1.241.550. Penerimaan sebesar Rp2.400.000/bulan dan keuntungan sebesar Rp437.426/bulan. Nilai tambah yang dihasilkan dari pengolahan kulit melinjo menjadi bolu sebesar Rp216.409 dengan rasio nilai tambah sebesar 54,10%. Hal ini menunjukkan bahwa kegiatan usaha tersebut termasuk dalam kategori nilai tambah tinggi.
