Abstract
Shallots are horticultural commodities that play an important role in Indonesia's economy, especially as a main ingredient in various food preparations. The demand comes not only from households but also from businesses in the culinary sector. However, the high demand, which is not matched by an adequate supply often leads to scarcity and price increases in the market. This condition highlights the need to understand the factors influencing the demand for shallots. This study aimed to identify consumer characteristics, analyze the factors influencing demand, and determine the dominant factors affecting the demand for shallots in Serang City. The research was conducted at Rau Market using a descriptive quantitative approach. The location was selected purposively because it is a central market for shallot sales. Data were collected through accidental sampling of 97 consumers and analyzed using the Cobb-Douglas. The results showed that, partially, price did not affect the demand for shallots, while income and the number of family members did. Simultaneously, price, income, and the number of family members had a significant effect on the demand for shallots at Rau Market in Serang City.

| Additional Information: | Bawang merah merupakan komoditas hortikultura yang memegang peranan penting dalam perekonomian Indonesia, terutama sebagai bahan utama dalam berbagai olahan makanan. Permintaan terhadap bawang merah tidak hanya berasal dari rumah tangga, tetapi juga dari pelaku usaha di sektor kuliner. Namun, tingginya permintaan yang tidak diimbangi dengan pasokan yang memadai sering kali menyebabkan kelangkaan dan kenaikan harga di pasar. Kondisi ini menunjukkan pentingnya memahami faktor-faktor yang memengaruhi permintaan bawang merah. Penelitian ini bertujuan untuk mengidentifikasi karakteristik konsumen, menganalisis faktor-faktor yang memengaruhi permintaan, serta menentukan faktor dominan yang memengaruhi permintaan bawang merah di Kota Serang. Penelitian dilakukan di Pasar Rau dengan pendekatan deskriptif kuantitatif. Lokasi dipilih secara purposive karena merupakan pasar sentral penjualan bawang merah. Pengumpulan data dilakukan melalui teknik accidental sampling terhadap 97 konsumen dan dianalisis menggunakan model Cobb-Douglas. Hasil penelitian menunjukkan bahwa secara parsial, harga tidak berpengaruh terhadap permintaan bawang merah, sedangkan pendapatan dan jumlah anggota keluarga berpengaruh. Secara simultan, harga, pendapatan, dan jumlah anggota keluarga berpengaruh signifikan terhadap permintaan bawang merah di Pasar Rau Kota Serang. | |||||||||
