Abstract
Currently, the disease pattern in Indonesia is shifting from infectious diseases to non-communicable diseases that threaten public health, one of which is diabetes mellitus (DM). A way to prevent and manage DM is by selecting carbohydrate sources based on foods’ Glycemic Index (GI). This descriptive research is to determine the energy value of cassava-based rice with the addition of SPI and chayote, the proximate content and energy, GI value, and glycemic load (GL) of cassava-based rice with added SPI and chayote. The research was conducted September to December 2024 at LAPTIAB Serpong. The research sample consists of test food (cassava-based rice with the addition of SPI and chayote) and standard food in pure glucose. The tools include an IKA C6000-Calorimeter, proximate analysis equipment, and blood glucose measurement tools. The research involves making analog rice, processing analog rice, conducting energy and proximate analysis, and GI testing. Data analysis used univariate analysis and independent T-Test analysis. The energy analysis of the analog rice yielded 421 kcal/100 grams. The proximate content the test food includes moisture content (51.15%), ash content (0.75%), protein content (6.53%), fat content (0.58%), carbohydrate content by difference (40.99%), and total energi 195 kkal/100 g. The GI value of the test food is 61.28 (moderate category) and GL is 12,24 (moderate category).

Additional Information: | Saat ini, pola penyakit di Indonesia mengalami perpindahan dari penyakit menular menjadi penyakit tidak menular yang mengancam kesehatan masyarakat salah satunya diabetes melitus (DM). Cara pencegahan dan penanganan DM yaitu dengan memilih sumber karbohidrat berdasarkan Indeks Glikemik (IG) pangan. Hal tersebut merupakan peluang pengembangan produk nasi berbasis singkong dengan penambahan IPK (Isolat Protein Kedelai) dan labu siam. Penelitian deskriptif ini bertujuan untuk mengetahui nilai energi beras singkong dengan penambahan IPK dan labu siam, zat gizi proksimat dan energi total, serta nilai IG dan Beban Glikemik (BG) pada nasi singkong dengan penambahan IPK dan labu siam. Penelitian ini dilakukan pada September hingga Desember 2024 di LAPTIAB Serpong. Sampel penelitian yaitu pangan uji (nasi berbasis singkong dengan penambahan IPK dan labu siam) dan pangan standar berupa glukosa murni. Alat yang digunakan yaitu IKA C6000-Kalorimeter, alat analisis proksimat, dan alat pengukur glukosa darah. Proses penelitian membuat beras analog, pengolahan beras analog, melakukan analisis energi dan proksimat, dan uji IG. Analisis data menggunakan analisis univariat dan analisis independent T-Test. Hasil analisis energi beras analog 421 kkal/100 gram. Kadar proksimat pangan uji adalah kadar air (51,15%), kadar abu (0,75%), kadar protein (6,53), kadar lemak (0,58%), kadar karbohidrat by difference (40,99%), dan energi total 195 kkal/100 g.
