Abstract
Vegetables are foods with sources of vitamins, minerals, water, protein, fat, fiber and amino acids that are most easily obtained at affordable prices. Vegetable consumption in Indonesia is still relatively low than recommended. Total consumption of Indonesian vegetables and fruit in 2022 will be 237.5 grams/capita/day, still lower than the recommended target of 286.9 grams/capita/day (82.78%). A research in Cilincing District, North Jakarta, was conducted to identify consumer preferences in buying vegetables from March to May 2024 by utilizing primary and secondary data. Primary data uses a questionnaire on traditional market vegetable consumers in the Cilincing District. The data obtained were analyzed for characteristics and preference attribute variables using descriptive analysis and the Friedman test. The findings of this research reveal that the majority of consumers prefer organic vegetables with fresh leaf vegetables, compared to root vegetables and fruit vegetables. Based on the research results, it is recommended that traditional market vegetable traders prioritize various types of leaf vegetables because they will be more sought after and purchased and pay attention to the freshness of the vegetables that will be marketed to consumers.

Additional Information: | Sayuran merupakan makanan dengan sumber vitamin, mineral, air, protein, lemak, serat dan asam amino yang paling mudah diperoleh dengan harga terjangkau. Konsumsi sayuran di Indonesia masih relatif rendah dari yang direkomendasikan. Seluruh konsumsi sayuran dan buah Indonesia pada tahun 2022 sebesar 237,5 gram/kapita/hari, masih lebih rendah dari target yang direkomendasikan sebesar 286,9 gram/kapita/hari (82,78%). Sebuah penelitian di Kecamatan Cilincing, Jakarta Utara dilakukan untuk mengidentifikasi preferensi konsumen dalam membeli sayuran dari bulan Maret hingga Mei 2024 dengan memanfaatkan data primer dan sekunder. Data primer menggunakan kuesioner mengenai konsumen sayuran pasar tradisional di Kecamatan Cilincing. Data yang diperoleh dianalisis untuk diuji meliputi karakteristik dan atribut preferensi variabel menggunakan analisis deskriptif dan uji Friedman. Hasil dari penelitian mengungkapkan bahwa mayoritas konsumen lebih menyukai sayuran organik dengan jenis sayuran segar sayuran daun, dibandingkan dengan sayuran umbi dan sayuran buah. Berdasarkan hasil penelitian, disarankan agar pedagang sayur pasar tradisional memprioritaskan berbagai jenis sayuran daun karena akan lebih banyak dicari dan dibeli serta memperhatikan kesegaran sayuran yang akan dipasarkan ke konsumen. | |||||||||
