Abstract

Analog rice is a food product made from non-rice ingredients. Analog rice can be made from beneng taro flour and corn flour. Addition of seaweed Gracilaria sp. can improve the functional properties of rice analog, such as dietary fiber. The aim of this research was to determine the best concentration of Gracilaria sp. seaweed flour in analog rice. This research was carried out from November 2023 to April 2024 at the Fisheries Product Processing Technology Laboratory, Department of Fisheries Science, Faculty of Agriculture, Sultan Ageng Tirtayasa University. This research used a Completely Randomized Design (CRD) with two replications. There are two stages in this research, making Gracilaria sp. seaweed flour and making analog rice. Concentration of seaweed Gracilaria sp. used are 0%, 10%, 13%, and 16%. The best analog rice concentration results were found with an additional concentration of 16%. The results showed a swelling power of 62%, a rehydration power of 64% and a white degree of 22,67%. The results of the best analog rice were water content 8,05%, ash content 3,06%, fat content 5,43%, protein content 5,43%, carbohydrate content 76,89% and dietary fiber 7,74%. The organoleptic test results show a "like" value for the analog rice produced.

Additional Information: Beras analog adalah produk pangan yang terbuat dari bahan non beras. Beras analog dapat terbuat dari tepung talas beneng dan tepung jagung. Penambahan rumput laut Gracilaria sp. dapat meningkatkan sifat fungsional terhadap beras analog seperti serat pangan. Tujuan penelitian ini adalah untuk menentukan konsentrasi terbaik substitusi tepung rumput laut Gracilaria sp. pada beras analog. Penelitian ini dilaksanakan pada bulan November 2023 hingga April 2024 di Laboratium Teknologi Pengolahan Hasil Perikanan Program Studi Ilmu Perikanan Fakultas Pertanian Universitas Sultan Ageng Tirtayasa. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua ulangan. Terdapat dua tahap dalam penelitian ini yaitu pembuatan tepung rumput laut Gracilaria sp. dan pembuatan beras analog. Konsentrasi rumput laut Gracilaria sp. yang digunakan adalah 0%, 10%, 13%, dan 16%. Hasil konsentrasi beras analog terbaik didapati pada penambahan konsentrasi sebanyak 16%. Hasil pengujian menunjukkan nilai daya kembang sebesar 62% daya rehidrasi sebesar 64% dan derajat putih 22,67%. Hasil pengujian kimia pada beras analog terbaik adalah kadar air 8,05%, kadar abu 3,06%, kadar lemak 5,43%, kadar protein 5,43%, kadar karbohidrat 76,89% dan serat pangan 7,74%. Hasil uji organoleptik menunjukkan nilai “suka” terhadap beras analog yang diproduksi.
