Abstract

The growth of coffee outlets or coffee shops in Serang Regency continues to increase and there is increasing competition between coffee shops with different coffee variants. There are two reasons why consumers prefer local coffee, including as a proving ground for millennials that they can follow trends and the quality of local coffee cannot be beat. The type of local coffee that is popular with young people is robusta because it is softer. This research aims to analyze the amount of income, added value, and comparison of roastbean and ground coffee processing at Dadaman Coffee UMKM. The location for this research was chosen purposively in the Dadaman Coffee UMKM, Citaman Village, Ciomas District, Serang Regency. The method used is a survey method in the form of a questionnaire to Dadaman Coffee business actors. The sampling technique used a purposive sampling method with a total of 7 respondents. This research uses quantitative methods and data analysis techniques using the Hayami value added analysis method. Based on the research results, it shows that the net income obtained by Dadaman Coffee UMKM from roastbean products is IDR 3,319,500/production and ground coffee income is IDR 1,320,750. Then, the added value of Dadaman ground coffee is greater when compared to robusta roastbeans. The added value for ground coffee is IDR 122,650/kg, while for robusta roastbeans it is IDR 105,000.

Additional Information: Pertumbuhan gerai kopi atau kedai kopi di Kabupaten Serang terus meningkat dan persaingan antar kedai kopi dengan varian kopi yang berbeda-beda pun semakin ketat. Ada dua alasan mengapa konsumen lebih memilih kopi lokal, diantaranya sebagai ajang pembuktian bagi kaum milenial bahwa mereka bisa mengikuti tren dan kualitas kopi lokal tidak ada tandingannya. Jenis kopi lokal yang digemari anak muda adalah robusta karena lebih lembut. Penelitian ini bertujuan untuk menganalisis besarnya pendapatan, nilai tambah, dan perbandingan pengolahan kopi sangrai dan kopi bubuk pada UMKM Kopi Dadaman. Lokasi penelitian ini dipilih secara purposive di UMKM Kopi Dadaman, Kelurahan Citaman, Kecamatan Ciomas, Kabupaten Serang. Metode yang digunakan adalah metode survei berupa kuesioner kepada pelaku usaha Kopi Dadaman. Teknik pengambilan sampel menggunakan metode purposive sampling dengan jumlah responden sebanyak 7 orang. Penelitian ini menggunakan metode kuantitatif dan teknik analisis data menggunakan metode analisis nilai tambah Hayami. Berdasarkan hasil penelitian menunjukkan bahwa pendapatan bersih yang diperoleh UMKM Kopi Dadaman dari produk biji sangrai adalah sebesar Rp3.319.500/produksi dan pendapatan kopi bubuk sebesar Rp1.320.750. Kemudian, nilai tambah kopi bubuk Dadaman lebih besar jika dibandingkan dengan biji sangrai robusta. Nilai tambah untuk kopi bubuk sebesar Rp122.650/kg, sedangkan untuk biji sangrai robusta sebesar Rp105.000.
