Abstract

Seaweed is one of the commodities produced from Indonesian fisheries which is widely exported and processed into agar or carrageenan. Carrageenan is a compound extracted from the seaweed Eucheuma cottonii. The aim of this research was to determine the effect of adding KOH solvent, NaOH solvent, and anti-clumping on the quality of carrageenan, to determine the yield, water content, and ash content contained in carrageenan flour, and to determine the functional groups contained in carrageenan flour. The method used in this research was extraction using KOH and NaOH solutions with concentrations of 8 %-wt, 10 %-wt, and 12 %-wt, as well as the addition of anti-corrosion with variations of 2 g, 3 g, and 4 g. The analysis carried out was the yield, water content and ash content based on standards set by SNI. The best results were obtained from the carrageenan product, namely with 12% NaOH adding 3 g of TCP and 12% KOH adding 2 g of TCP. The carrageenan underwent functional group analysis (FTIR). Based on the FTIR test, it shows that carrageenan with NaOH extract has glycosidic, 3,6-anhydrogalactose, galactose-4-phosphate, alkyl and carbonate functional groups. Meanwhile, the FTIR test results for carrageenan with KOH extract have the functional groups sulfate ester, glycosidic, 3,6-anhydrogalactose, galactose-4-phosphate, carbonyl, carbonate and phosphate.

Additional Information: Rumput laut merupakan salah satu komoditas yang dihasilkan dari perikanan Indonesia yang banyak diekspor dan diolah menjadi agar ataupun karagenan. Karagenan merupakan senyawa yang diekstrak dari rumput laut jenis Eucheuma cottonii. Tujuan penelitian ini adalah untuk mengetahui pengaruh dari penambahan pelarut KOH, pelarut NaOH, dan antikempal terhadap mutu karagenan, mengetahui rendemen, kadar air, dan kadar abu yang terkandung dalam tepung karagenan, dan mengetahui gugus fungsi yang terkandung dalam tepung karagenan. Metode yang digunakan pada penelitian ini adalah ekstraksi dengan menggunakan larutan KOH dan NaOH dengan konsentrasi sebesar 8 %-wt, 10 %-wt, dan 12 %-wt, serta penambahan antikempal dengan variasi 2 g, 3 g, dan 4 g. Analisa yang dilakukan yaitu rendemen, kadar air, dan kadar abu berdasarkan standard yang ditetapkan SNI, diperoleh hasil terbaik dari produk karagenan yaitu dengan NaOH 12 %-wt penambahan TCP sebesar 3 g dan KOH 12 %-wt penambahan TCP sebesar 2 gr. Karagenan tersebut dilakukan analisis gugus fungsi (FTIR). Berdasarkan uji FTIR, menunjukkan karagenan dengan pengekstrak NaOH memiliki gugus fungsi glikosidik, 3,6-anhydrogalactose, galactose-4-phospate, alkil, dan karbonat. Sedangkan, hasil uji FTIR untuk karagenan dengan pengekstrak KOH memiliki gugus fungsi ester sulfat, glikosidik, 3,6-anhydrogalactose, galactose-4-phospate, karbonil, karbonat, dan phosphate.
