Abstract

This study aims to describe the form and meaning of traditional culinary lexicons based on meat as an accompaniment to rice in the cultural scope of Serang City society. The method used in this study is descriptive qualitative. The data collection method used is the conversational method with basic recording techniques and advanced note-taking techniques. The data sources in the study came from the oral speech of informants as sources, namely the UKM center and cultural figures of Serang City society. Data analysis used the matching method. Based on the results of the data analysis that has been carried out, 32 data were found and can be detailed as follows: (1) lexicon of traditional culinary names as many as 7 data; (2) lexicon of names of ingredients and tools used in making traditional culinary as many as 17 data; and (3) lexicon of names of traditional culinary making processes as many as 8 data.

Additional Information: Penelitian ini bertujuan untuk mendeskripsikan bentuk dan makna leksikon kuliner tradisional berbahan dasar daging sebagai pendamping nasi dalam lingkup budaya masyarakat Kota Serang. Metode yang digunakan dalam penelitian ini adalah deskriptif kualitatif. Metode pengumpulan data yang digunakan adalah metode cakap dengan teknik dasar rekam dan teknik lanjutan catat. Sumber data dalam penelitian berasal dari tuturan lisan para informan sebagai narasumber yaitu sentral UKM dan budayawan masyarakat Kota Serang. Analisis data menggunakan metode padan. Berdasarkan hasil analisis data yang telah dilakukan, ditemukan 32 data dan dapat diperinci sebagai berikut: (1) leksikon nama kuliner tradisional sebanyak 7 data; (2) leksikon nama bahan dan alat yang digunakan dalam pembuatan kuliner tradisional sebanyak 17 data; dan (3) leksikon nama proses pembuatan kuliner tradisional sebanyak 8 data.
