Abstract

This research investigates the effect of beeswax concentration and temperature on coating of cavendish. The aim of this research is to determine the effect of beeswax coating and different storage temperatures on the physical quality of cavendish. This research is conducted in the laboratory of basic science and plant protection, University of Sultan Ageng Tirtayasa. The experimental design used a factorial split plot. The first factor was storage temperature which consisted of 2 levels, low temperature in the 10°C and room temperature in the 29 - 32°C. The second factor was beeswax concentration which consisted of 4 levels, that is 0, 2, 4 and 6%. This research showed that the effect of beeswax concentration and storage temperature gave the best result in weight loss at 6% wax concentration at the lowest temperature (11,40%), with the lowest moisture content at 2% wax concentration (71,30%). The increase total dissolved solid (13,89°brix) on the 6th day. The color inhibition with a concentration of 6% (scale 7), the increase of the highest hardness at 2% wax concentration at low temperature (13,3%), the decrease of damage level at 6% concentration (scale 3) at low temperature. That the increasing of wax coating concentration and low temperature had a significant effect on decreasing weight loss, decreasing moisture content, decreasing total dissolved solid, color change inhibition, increasing the hardness and decreasing the damage of cavendish.

Additional Information: Penelitian ini menyelidiki pengaruh konsentrasi lilin lebah dan suhu pada pelapisan cavendish. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh pelapisan lilin lebah dan suhu penyimpanan yang berbeda terhadap kualitas fisik tanaman cavendish. Penelitian ini dilakukan di laboratorium sains dasar dan perlindungan tanaman, Universitas Sultan Ageng Tirtayasa. Rancangan percobaan yang digunakan adalah petak terpisah faktorial. Faktor pertama adalah suhu penyimpanan yang terdiri dari 2 taraf, suhu rendah pada suhu 10°C dan suhu ruang pada suhu 29 - 32°C. Faktor kedua adalah konsentrasi lilin lebah yang terdiri dari 4 taraf, yaitu 0, 2, 4 dan 6%. Hasil penelitian menunjukkan bahwa pengaruh konsentrasi lilin lebah dan suhu penyimpanan memberikan hasil terbaik pada susut bobot pada konsentrasi lilin 6% pada suhu terendah (11,40%), dengan kadar air terendah pada konsentrasi lilin 2% (71,30%). Peningkatan total padatan terlarut (13,89°brix) terjadi pada hari ke-6. Penghambatan warna dengan konsentrasi 6% (skala 7), peningkatan kekerasan tertinggi pada konsentrasi lilin 2% pada suhu rendah (13,3%), penurunan tingkat kerusakan pada konsentrasi 6% (skala 3) pada suhu rendah. Bahwa peningkatan konsentrasi pelapisan lilin dan suhu rendah memberikan pengaruh yang nyata terhadap penurunan susut berat, penurunan kadar air, penurunan total padatan terlarut, penghambatan perubahan warna, peningkatan kekerasan dan penurunan kerusakan pada cavendish.
