Abstract

Food service management in hospital is susceptible to contamination and could cause foodborne disease. One effort to prevent food contamination is to follow correct sanitation and hygiene practices. The aim of this research is to analyze the relationship between knowledge, attitudes, work period, and training history on the sanitation hygiene practices of food handlers. This research is a quantitative study with a cross-sectional design. The study used total sampling method involving all of the food handlers at the Dr. Dradjat Prawiranegara Regional General Hospital Nutrition Installation, which accounted for 39 people. Data collection was carried out through interviews and observations in November 2023 and then analyzed using the chi-square test. It was found that the majority of food handlers have good knowledge (74.4%), good attitude (51.3%), work period (76.9%), attended training (94.9%) and implemented good sanitation hygiene practices (76.9%). The conclusion of the research is that there is a significant relationship between knowledge (p=0.000), attitude (p=0.047), and training history (p=0.008) to the sanitation hygiene practices among the food handlers. However, there is no relationship between work period, and sanitation hygiene practices (p= 0.405).

Additional Information: Penyelenggaraan makan rumah sakit rentan terkontaminasi dan dapat menyebabkan penyakit (foodborne disease). Salah satu upaya pencegahan terjadinya kontaminasi makanan adalah praktik higiene sanitasi yang benar. Tujuan dari penelitian ini adalah untuk menganalisis hubungan pengetahuan, sikap, masa kerja, dan riwayat pelatihan terhadap praktik higiene sanitasi tenaga penjamah makanan. Penelitian ini menggunakan metode kuantitatif dengan rancangan cross sectional. Sampel dalam penelitian ini ditentukan total sampling, yaitu seluruh penjamah makanan di Instalasi Gizi Rumah Sakit Umum Daerah dr.Dradjat Prawiranegara sebanyak 39 orang. Pengambilan data dilakukan dengan wawancara dan observasi pada November 2023 yang kemudian dianalisis dengan uji chi-square. Didapatkan hasil sebagian besar penjamah makanan berpengetahuan yang baik (74,4%), sikap yang baik (51,3%), masa kerja yang lama (76,9%), sudah pernah mengikuti pelatihan (94,9%), dan menerapkan praktik higiene sanitasi yang baik (76,9%). Kesimpulan dari penelitian adalah terdapat hubungan yang signifikan antara pengetahuan (p=0,000), sikap (p=0,047), dan riwayat pelatihan (p=0,008) dengan praktik higiene sanitasi serta tidak terdapat hubungan antara masa kerja dengan praktik higiene sanitasi (p = 0,405).
