Abstract
Nasi Padang In-Flight Meals is transportation meals that generaly prioritizes taste and price than nutritional quality. Nasi Padang In-Flight meals has a high threat of food safety hazard during the processing until it reaches consumers. The aim of this studi was to analyze and evaluate the nutritional value, nutritional quality and microbiology contained in Nasi Padang in-flight meals. The method used in this reaserch is descriptive observational reaserch. Sample were taken using a puposive sampling technique with criteria determined by researhers taken in OctoberNovember 2023. The results of study have shown the nutritional value of Nasi Padang in-flight meals at PT. X is in accordance with the nutritional label, however the nutritional quality of the product doesn’t fully meet the body’s need except for total energy. The product has total microbial contamination which is in the safe catagory. The conclusion is Nasi Padang in-flight meals at PT. X doesn’t fully pay attention to the nutritional aspect, but really pay attention to the food safety aspect.

Additional Information: | Nasi Padang In-Flight Meals merupakan salah satu produk makanan transportasi yang pada umumnya lebih mengutamakan cita rasa dan biaya saja dibandingkan dengan aspek gizinya. Nasi Padang In-Flight meals juga memiliki ancaman keamanan pangan yang tinggi selama proses pengolahan hingga ke tangan konsumen. Tujuan dari penelitian ini yaitu untuk menganalisis dan mengevaluasi nilai gizi, mutu gizi dan mikrobiologi yang terkandung dalam Nasi Padang In-Flight Meals. Metode yang digunakan dalam penelitian yaitu desain penelitian observasional deskriptif. Sampel diambil menggunakan teknik purposive sampling dengan kriteria yang ditentukan oleh peneliti yang dilaksanakan pada bulan Oktober�November 2023. Hasil penelitian menunjukkan nilai gizi Nasi Padang In-Flight Meals di PT. X sudah sesuai dengan label ING kemasan, namun mutu gizi pada produk belum sepenuhnya sesuai dengan kebutuhan tubuh kecuali total energinya. Produk memiliki cemaran total mikroba yang berada dalam kategori aman. Kesimpulan dalam penelitian ini yaitu Nasi Padang In-Flight Meals di PT. X belum sepenuhnya memperhatikan aspek gizinya, namun sangat memperhatikan aspek keamanan pangannya. | |||||||||
