Abstract
Golden apple snails, belonging to the gastropod group, are known to disrupt rice crop production in agricultural fields. The gastropod shells contain up to 20% chitin, a crucial component used in chitosan production. Chitosan exhibits antimicrobial properties, effectively inhibiting pathogenic bacteria and spoilage microorganisms, including fungi, gram-positive bacteria, etc. The extraction process of chitosan from golden apple snail shells involves steps such as deproteinization, demineralization, and deacetylation. This research aims to investigate the effects of NaOH concentration (20%, 30%, and 40%), HCl with and without FeCl3, and deacetylation process duration (10, 30, and 60 minutes) on the degree of deacetylation of chitosan obtained from these shells. The most promising outcome of this study was achieved when FeCl3 was added with an HCl:FeCl3 ratio of 2:1, resulting in a deacetylation degree of 88.35%. Higher NaOH concentrations and prolonged durations yielded higher deacetylation degrees, with the highest deacetylation degree achieved at 30 minutes duration in this experiment. Additional Information: | Keong mas adalah organisme dalam kelompok gastropoda di lahan pertanian padi yang mengganggu produksi tanaman padi. Cangkang gastropoda memiliki kandungan kitin mencapai 20%. Kandungan kitin ini kemudian menjadi bahan utama pembuatan kitosan. Kitosan memiliki sifat antimikroba, karena dapat menghambat bakteri patogen dan mikroorganisme pembusuk, termasuk jamur, bakteri grampositif, dan lain sebagainya. Untuk membuat kitosan dari cangkang keong mas, dilakukan proses ekstraksi meliputi deproteinasi, demineralisasi, dan deasetilasi. Tujuan dilakukannya penelitian ini adalah untuk mengetahui pengaruh dari konsentrasi NaOH (20, 30, dan 40%), HCl dengan dan tanpa FeCl3, waktu proses deasetilasi (10, 30, dan 60 menit) terhadap nilai derajat deasetilasi kitosan cangkang keong mas. Hasil terbaik penelitian ini dicapai pada variasi penambahan FeCl3 dengan perbandingan HCl : FeCl3 yaitu 2:1 diperoleh nilai derajat deasetilai 88,35%. Semakin tinggi konsentrasi NaOH dan semakin lama waktu yang digunakan akan memberikan nilai derajat deasetilasi yang tinggi dengan penggunaan waktu pada percobaan ini yaitu selama 30 menit.
