Abstract
Banana fruit (Musa spp.) is a type of fruit that has a shelf life that is not long enough because it belongs to the climacteric fruit group, which is a type of fruit that experiences an increase in the rate of ripening after being harvested. Post-harvest handling of bananas aims to maintain the quality and shelf life of the fruit. The purpose of this study was to develop a reaction rate reaction kinetics model using Michaelis Menten's theory referring to the ethylene gas concentration of banana ripening coated with PVA chitosan composite biofilm during the storage period. The PVA chitosan composite used is an 80/20 ratio as this is the optimum condition. The mass shrinkage of muli bananas increases during the storage period and the concentration of sugar content indicated by the brix meter will increase. The ripening of banana on the composite biofilm of this fruit was significant on day seven with an ethylene gas concentration of 3,24 ppm. Ethylene gas contained in muli bananas affects the ripening process. The reaction kinetics model of uncoated respiration rate is Vmax= 36.95 mMs-1. In polymer blends (PB) obtained Vmax = 16.64 mMs-1. In polymer blend dengan cross-linker agent (PBC) Vmax=10.33 mMs- 1. While the last coating is composite biofilm (CB) value Vmax = 3,24 mMs-1. The application of PVA chitosan composite on muli bananas is expected to inhibit gas ethylene release so that the fruit ripening process requires a longer time and extends the shelf life of the fruit.

Additional Information: | Buah pisang (Musa spp) merupakan jenis buah yang memiliki umur simpan yang tidak cukup panjang karena termasuk golongan buah klimaterik, yaitu jenis buah yang mengalami peningkatan laju pemasakan setelah dipanen. Penanganan setelah panen buah pisang bertujuan untuk mempertahankan kualitas dan umur simpan buah. Tujuan penelitian ini adalah adalah untuk mengidentifikasi model kinetika reaksi laju reaksi menggunakan teori Michaelis Menten mengacu pada konsentrasi gas etilen pematangan buah pisang yang dilapisi biofilm komposit kitosan PVA selama masa penyimpanan. Komposit kitosan PVA yang digunakan adalah rasio 80/20 karena ini merupakan kondisi optimum. Hilang massa buah pisang muli semakin meningkat selama masa penyimpanan dan konsentrasi kadar gula yang ditunjukkan oleh brix meter akan semakin meningkat. Pematangan buah pisang pada composite biofilm (CB) ini terlihat signifikan pada hari ke-7 dengan konsentrasi gas etilen 3,24ppm. Gas etilen yang terkandung pada buah pisang muli mempengaruhi proses pematangan. Model kinetika reaksi laju gas etilen tanpa coating bernilai Vmax= 36,95 mMs-1 . Pada polymer blends (PB) didapat Vmax= 16,64 mMs-1 . Pada cross-linker agent (PBC) Vmax= 10,33 mMs-1 . Sedangkan pada coating yang terakhir yaitu composite biofilm (CB) nilai Vmax= 3,24 mMs-1 . Aplikasi komposit kitosan PVA pada buah pisang muli diharapkan dapat menghambat pelepasan gas etilen sehingga proses pematangan buah membutuhkan waktu yang lebih lama dan memperpanjang umur simpan buah. | |||||||||
