Abstract
Meat is a food that is very useful for consumption because it contains food substances needed by the human body. This meat processing process will affect meat quality such as storage, cooling, and freezing, so it can also affect the impedance value. This research is expected to take measurements using the ZnO-Ag sensor to determine the impedance and capacitance in pork, beef, chicken, fish meat and mutton using a metal-based sensor of zinc oxide (ZnO) semiconductor material with the addition of silver (Ag). Synthesis of semiconductor thin layer on the surface of polymethylmethacrylate (PMMA) by spray coating and chemical bath deposition (CBD) methods. The spray coating process becomes a seeding stage by spraying the precursor solution onto the substrate with a distance of 5 cm, then the growing stage is carried out by the CBD method. Susbtrate that has been spray-coatingd, will be heated in an oven with a temperature of 110 ° C for 5 hours. ZnO-Ag semiconductors are further fabricated to become sensors. Sensor performance tests are carried out by taking air data first for standardization values in the frequency range of 10 MHz- 6000 MHz. The water capacitance value of 1.69 x 10-6 is greater than the average value of air capacitance value of 1.29 x 10-6. In the sample impedance curve and sample FTIR results, pork has more visible fingerprint characteristics than other meats. The ZnO-Ag capacitive sensor can already distinguish between the given test media, seen by the average results of different test media impedances.

Additional Information: | Daging merupakan bahan pangan yang sangat bermanfaat untuk dikonsumsi karena mengandung zat – zat makanan yang dibutuhkan oleh tubuh manusia. Proses pengolahan daging ini akan mempengaruhi kualitas daging seperti penyimpanan, pendinginan, dan pembekuan, sehingga hal tersebut juga dapat mempengaruhi nilai impedansi. Penelitian ini, diharapkan dapat melakukan pengukuran menggunakan sensor ZnO-Ag untuk mengetahui impedansi dan kapasitansi pada daging babi, daging sapi, daging ayam, daging ikan serta daging kambing dengan menggunakan sensor berbasis logam material semikonduktor seng oksida (ZnO) dengan penambahan perak (Ag). Sintesis lapisan tipis semikonduktor di atas permukaan polymethylmethacrylate (PMMA) dengan metode spray coating dan chemical bath deposition (CBD). Proses spray coating menjadi tahapan seeding dengan menyemprotkan larutan prekusor ke substrat dengan jarak 5 cm, kemudian tahapan growing dilakukan dengan metode CBD. Susbtrat yang telah dilakukan spray coating, akan dipanaskan dalam oven dengan temperatur 110˚C selama 5 jam. Semikonduktor ZnO-Ag selanjutnya difabrikasi untuk menjadi sensor. Uji performa sensor dilakukan dengan mengambil data udara terlebih dahulu untuk nilai standarisasi dalam rentang frekuensi 10 MHz- 6000 MHz. Nilai kapasitansi air 1.69 x 10-6 lebih besar daripada nilai rata-rata nilai kapasitansi udara sebesar 1.29 x 10-6. Pada kurva impedansi sampel dan hasil FTIR sampel, daging babi memiliki ciri khas fingerprint lebih banyak terlihat dibandingkan daging lainnya. Sensor kapasitif ZnO-Ag sudah dapat membedakan antara media uji yang diberikan, terlihat dengan hasil rata-rata impedansi media uji yang berbeda-beda. | |||||||||
