Abstract

Detecting the freshness of fish is crucial in the fisheries industry to ensure the quality of safe and high-quality products. The fisheries industry requires packaging that can monitor the freshness of common carp (Cyprinus carpio). Anthocyanins found in mangosteen peel can be used as a biosensor that responds to changes in the quality of common carp. However, the utilization of mangosteen peel in this context has not been fully optimized. Therefore, the aim of this research was to maximize the utilization of mangosteen peel (Garcinia mangostana) as a biosensor for detecting the freshness of common carp.This study employed laboratory-based experimental research, utilizing color change as a parameter measured through colorimetry during testing. The data analysis involved Fourier Transform Infrared Spectroscopy (FTIR) to determine the presence of hydroxyl (O-H) and aromatic (C=C) functional groups in the mangosteen peel extract. The biosensor's selectivity was examined by testing its response to common carp at various pH and temperature conditions.The results of the research indicated that the mangosteen peel extract contained hydroxyl (O-H) and aromatic (C=C) functional groups. The concentration of 80 gram at pH 2 exhibited the most optimal color contrast, while the color change at 37.2°C was more significant compared to temperatures of 27°C and 9.1°C.

Additional Information: Pendeteksian kesegaran ikan merupakan hal yang penting dalam industri perikanan untuk memastikan kualitas produk yang aman dan berkualitas. Industri perikanan membutuhkan kemasan yang dapat memantau kesegaran ikan mas. Antosianin yang terdapat dalam kulit manggis dapat dijadikan sebagai biosensor yang dapat merespons perubahan kualitas ikan mas, namun hingga saat ini pemanfaatan kulit manggis masih belum optimal. Maka tujuan penelitian ini untuk memaksimalkan pemanfaatan kulit manggis (Garcinia mangostana) sebagai biosensor yang dapat mendeteksi kesegaran ikan mas (Cyprinus carpio). Penelitian ini menggunakan penelitian eksperimen laboratorium, parameter yang digunakan adalah perubahan warna pada kertas whatman selama pengujian. Analisis data mengunakan spektrofotometer FTIR dan uji selektivitas biosensor terhadap ikan mas pada variasi pH dan variasi suhu. Hasil penelitian menunjukan bahwa ekstrak kulit manggis mengandung gugus hidroksil (O-H) dan gugus aromatic (C=C), konsentrasi 80 gram pH 2 memiliki kontras warna paling optimum dan perubahan warna pada suhu 37,2°C lebih signifikan dibandingkan pada suhu 27°C dan 9,1°C.
