Abstract

UMKM Roti Seri is one of the UMKM engaged in the food industry which produces various kinds of bread. In the supply chain activities starting from the procurement of raw materials, production activities, packaging, shipping and distribution of products to consumers, it turns out that there are still some risks that can hamper these supply chain activities. To reduce and overcome the various risks that occur, it is necessary to carry out mitigation in order to minimize the risk. The purpose of this research is to identify the UMKM Breads Series supply chain risks, analyze and assess the UMKM Breads Series supply chain risks, and determine priority countermeasures in the UMKM Breads Series. This study uses the Supply Chain Operation Reference (SCOR) model for the vulnerability of company supply chain activities and the House of risk (HOR) method to provide assistance, analysis, evaluation, and completion of risk rescue actions. Based on the results of the collection in this study, there were 32 risk events caused by 18 risk agents, 6 priority risk agents, and 15 proposed risk mitigation actions, including making a priority list of alternative suppliers of bread raw materials (PA1 ), carry out routine control of the production area (2-3 times a week) (PA7) to planning financial/production reserves (PA12) Keywords: Supply Chain Risk Mitigation, Supply Chain Operation Reference, House of risk

Additional Information: UMKM Breads Serie merupakan salah satu UMKM yang bergerak di bidang industri makanan yang memproduksi berbagai macam roti. Dalam aktivitas rantai pasok mulai dari pengadaan bahan baku, aktivitas produksi, pengemasan, pengiriman, dan pendistribusian produk hingga ke tangan konsumen, ternyata masih ditemukan beberapa risiko yang dapat menghambat aktivitas rantai pasok tersebut. Untuk mengurangi dan mengatasi berbagai risiko yang terjadi perlu dilakukannya mitigasi guna meminimalisasi risiko. Tujuan penelitian ini adalah mengidentifikasi risiko rantai pasok UMKM Breads Serie, menganalisis dan mengevaluasi risiko rantai pasok UMKM Breads Serie, dan menentukan aksi mitigasi yang diprioritaskan di UMKM Breads Serie. Penelitian ini menggunakan model Supply Chain Operation Reference (SCOR) untuk memetakan aktivitas rantai pasok perusahaan dan metode House of risk (HOR) untuk melakukan identifikasi, analisa, evaluasi, dan penentuan aksi mitigasi risiko. Berdasarkan hasil identifikasi pada penelitian ini didapatkan 32 kejadian risiko (risk event) yang disebabkan oleh 18 sumber risiko (risk agent), 6 sumber risiko prioritas, serta didapatkan 15 aksi mitigasi risiko yang diusulkan diantaranya yaitu Menambah supplier bahan baku utama (PA1), melakukan controling pada area produksi secara rutin (2-3 Kali dalam seminggu) (PA7) hingga membuat perencanaan keuangan/produksi cadangan (PA12).
