Abstract

The increase in soybean prices as the main raw material for making tofu requires the application of production management to be carried out properly and effectively to obtain maximum profit. This study aims to determine the application of production management in increasing income and what are the supporting and inhibiting factors of tofu production. The type of research used is descriptive qualitative research. In this study, the research subjects were business owners and employees who were selected purposively (purposive sampling), while the object of research was production management in increasing revenue at Tiga Putra Tofu Factory in Pamarayan District. The data analysis model used refers to the Miles and Huberman interactive analysis model which has three components, namely data reduction, data display, and conclusion drawing/verification. Based on the results of the study, it is concluded that Tiga Putra Tofu Factory in Pamarayan District has implemented production management well in the aspects of production system planning, production quality control, and production information systems. However, the organizational structure of the production information system has not been implemented in writing, but all employees continue to work according to their duties. The strong desire of the owner to increase income, high consumer buying interest and employ the community are supporting factors in this business. While the inhibiting factors are the increase in soybean prices, which requires a reduction in the amount of production, and the condition of firewood that is still wet, which hampers the cooking of tofu.

Additional Information:	Kenaikan harga kedelai sebagai bahan baku utama pembuatan tahu menuntut adanya penerapan manajemen produksi secara efektif untuk memperoleh keuntungan yang maksimal. Penelitian ini bertujuan untuk mengetahui penerapan manajemen produksi dalam meningkatkan pendapatan serta apa saja faktor pendukung dan penghambat dalam produksi tahu. Jenis penelitian yang digunakan adalah penelitian kualitatif deskriptif. Dalam penelitian ini subjek penelitiannya adalah pemilik usaha dan karyawan yang dipilih secara purposive sampling, sedangkan objek penelitiannya adalah manajemen produksi dalam meningkatkan pendapatan di Pabrik Tahu Tiga Putra Kecamatan Pamarayan. Model analisis data yang digunakan mengacu pada model analisis interaktif Miles dan Huberman yang memiliki tiga komponen yaitu reduksi data, display data, dan penarikan kesimpulan/verifikasi. Berdasarkan hasil penelitian disimpulkan bahwa Pabrik Tahu Tiga Putra di Kabupaten Pamarayan telah menerapkan manajemen produksi dengan baik pada aspek perencanaan sistem produksi, pengendalian kualitas produksi, dan sistem informasi produksi. Namun struktur organisasi pada aspek sistem informasi produksi belum dilaksanakan secara tertulis, meski demikian seluruh karyawan tetap bekerja sesuai dengan tugasnya. Keinginan pemilik yang kuat untuk meningkatkan pendapatan, minat beli konsumen yang tinggi dan mempekerjakan masyarakat merupakan faktor pendukung dalam usaha ini. Sedangkan faktor penghambatnya adalah kenaikan harga kedelai yang membutuhkan pengurangan jumlah produksi, dan kondisi kayu bakar yang masih basah yang menghambat pemasakan tahu.
