Abstract

Indonesia is a seaweed exporting country that ranked fifth in 2019, but 80% of the exported seaweed is still in the form of dried seaweed whose selling price is quite low when compared to the selling price of other seaweed products such as carrageenan. This research was conducted to produce SRC (semi-refined carrageenan) products from Eucheuma cottonii red seaweed. Eucheuma cottonii which is in accordance with the standards of FAO and FCC and analyze the factors that affect the results of semi-refined carrageenan products. carrageenan. The manufacture of carrageenan is done by extracting seaweed with KOH solution, where KOH is varied in concentration of 5%, 7.5%, and 10% (w/v) at a drying temperature of 80°C and 90°C, and bleaching treatment using calcium hypochlorite with a concentration variation of 1.5% and 2.5% (w/v). Then the yield, gel strength, viscosity, water content, whiteness degree, and moisture content were analyzed, The best results obtained from SRC products based on the analysis carried out are in samples with variations of 10% KOH concentration, 1.5% chlorine concentration, and drying temperature of 80°C. 80°C drying temperature

Additional Information: Indonesia merupakan negara pengekspor rumput laut yang berada pada urutan kelima pada tahun 2019, namun 80% rumput laut yang diekspor masih berupa rumput laut kering yang harga jualnya cukup rendah apabila dibandingkan dengan harga jual dari produk rumput laut lain seperti karagenan. Penelitian ini dilakukan untuk menghasilkan produk SRC (semi refined carrageenan) dari rumput laut merah jenis Eucheuma cottonii yang sesuai dengan standar dari FAO dan FCC serta menganalisa faktor-faktor yang berpengaruh terhadap hasil produk semi refined carrageenan. Pembuatan karagenan dilakukan dengan mengekstraksi rumput laut dengan larutan KOH, dimana KOH divariasikan konsentrasinya yaitu 5%, 7,5%, dan 10% (w/v) pada suhu pengeringan 80°C dan 90°C, serta perlakuan bleaching dengan menggunakan kalsium hipoklorit dengan variasi konsentrasi sebesar 1,5 % dan 2,5 % (w/v). Kemudian dilakukan analisa rendemen, kekuatan gel, viskositas, kadar air, derajat putih, dan kadar abu Hasil terbaik yang didapatkan dari produk SRC yang didapatkan berdasarkan analisa yang dilakukan yaitu pada sampel dengan variasi konsentrasi KOH 10%, konsentrasi kaporit 1,5%, dan suhu pengeringan 80°C
