Abstract

The high iron content in Sargassum sp. and carbohydrates in beneng taro make these two ingredients very good for consumption in meeting daily nutritional needs. The use of these two ingredients in the manufacture of analog rice will increase the nutritional intake of the community, especially the iron content from seaweed Sargassum sp. Therefore, in this study the addition of Sargassum sp. seaweed was carried out in the manufacture of analog rice from beneng taro (Xanthosoma undipes). The purpose of this study was to characterize and find the best formulation of analog rice from beneng taro with the addition of Sargassum sp. seaweed. As high functional iron based on physical, chemical, and organoleptic characteristics. Statistical analysis of data using a completely randomized desgn (CRD) and consisting of 2 repetitions. The consentration of Sargassum sp. seaweed used by 0%, 5%, 10%, 15%. The results of this study indicated that the consentration of 15% was the best treatment with the physical caharacteristics of white degree of 1,23%, sweeling power of 59,3%, and rehydration power 61%. The cemical characteristics of the best analog rice consist of 10,14 water content, 4,14% ash content, 0,60% fat content, 5,69% protein content, 79,44% carbohydrates, and 4,36 mg iron which fulfills 19,80% of iron intake in female adolescents. The sensory test results showed that the panelists rated “like” the resulting analog rice.

Additional Information: Kandungan besi yang tinggi pada Sargassum sp. dan karbohidrat pada beneng talas menjadikan kedua bahan ini sangat baik untuk dikonsumsi dalam memenuhi nutrisi harian kebutuhan. Penggunaan kedua bahan tersebut dalam pembuatan beras analog akan meningkatkan asupan gizi masyarakat terutama kandungan zat besi dari rumput laut Sargassum sp. Oleh karena itu pada penelitian ini penambahan Sargassum sp. rumput laut dilakukan dalam pembuatan beras analog dari beneng talas (Xantosoma unpes). Tujuan dari penelitian ini adalah untuk mengkarakterisasi dan menemukan formulasi terbaik beras analog dari beneng talas dengan penambahan Sargassum sp. rumput laut. Sebagai besi fungsional tinggi berdasarkan fisik, kimia, dan organoleptik karakteristik. Analisis statistik data menggunakan rancangan acak lengkap (CRD) dan terdiri dari 2 ulangan. Konsentrasi Sargassum sp. rumput laut digunakan oleh 0%, 5%, 10%, 15%. Hasil penelitian ini menunjukkan bahwa konsentrasi 15% merupakan perlakuan terbaik dengan karakteristik fisik derajat putih 1,23%, daya sweeling 59,3%, dan daya rehidrasi 61%. Karakteristik kimia beras analog terbaik terdiri dari kadar air 10,14, 4,14% kadar abu, kadar lemak 0,60%, kadar protein 5,69%, karbohidrat 79,44%, dan Zat besi 4,36 mg yang memenuhi 19,80% asupan zat besi remaja putri. Itu hasil uji sensori menunjukkan panelis menilai “suka” beras analog yang dihasilkan.
