Abstract

Banana is a climacteric tropical fruit with a Latin name Musaceae which is known to have good nutritional content, availability of which abundant, and a sweet taste that most people like. Bananas often used as a substitute for energy sources due to its fructose content quite high and bioactive compounds along with vitamins that are good for consumption. The quality of bananas is easily decreased due to mass transfer, fast oxidation process, easily contaminated with bacteria, and ethylene gas. Decrease in quality of bananas can be minimized using the method coating. Chitosan solution was synthesized with PVA with the material Cellulose Nanocrystal (CNC) filler as filler, glycerol as agent plasticizer, and citric acid as a cross-linker agent. coating method is carried out to extend the shelf life of bananas using composite biofilms Chitosan/PVA. Banana coating process using Chitosan/PVA biofilm was carried out to determine the best performance on the shelf life of bananas. Method Banana fruit coating was carried out using composite biofilm synthesis results Chitosan/PVA which was tested against a decrease in the shelf life of bananas with measurement parameters on banana weight loss, sugar content, ethylene gas, and color change for 7 days. The test results showed that the composite biofilm Chitosan/PVA which is crosslinked with citric acid with the addition of CNC filler can provide the best performance to inhibit the ripening rate of the fruit bananas, inhibited the increase in sugar levels on the 7th day with a value of 19.8% as well inhibited the formation of ethylene gas on the 7th day with a value of 3.24 ppm then it can be concluded that chitosan/PVA composite biofilm can extend shelf life of bananas.

Additional Information: Pisang merupakan salah satu buah tropis klimaterik dengan nama latin Musaceae yang dikenal memiliki kandungan gizi yang baik, ketersediaan yang melimpah, dan rasa manis yang disukai kebanyakan orang. Pisang sering dimanfaatkan sebagai pengganti sumber energi akibat kandungan fruktosa yang cukup tinggi dan senyawa bioaktif beserta vitamin yang baik untuk dikonsumsi. Kualitas buah pisang mudah mengalami penurunan akibat perpindahan massa, proses oksidasi yang cepat, mudah terkontaminasi bakteri, dan gas etilen. Penurunan kualitas pada buah pisang dapat diminimalisir menggunakan metode coating atau pelapisan. Larutan kitosan disintesis dengan PVA dengan material pengisi Cellulose Nanocrystal (CNC) sebagai filler, gliserol sebagai agen plasticizer, dan asam sitrat sebagai agen cross-linker. Metode coating dilakukan untuk memperpanjang umur simpan buah pisang menggunakan biofilm komposit Kitosan/PVA. Proses coating pisang menggunakan biofilm Kitosan/PVA dilakukan untuk mengetahui performa terbaik terhadap umur simpan buah pisang. Metode coating buah pisang dilakukan menggunakan hasil sintesis biofilm komposit Kitosan/PVA yang diujikan terhadap penurunan umur simpan buah pisang dengan parameter pengukuran pada susut berat pisang, kadar gula, gas etilen, dan perubahan warna selama 7 hari. Hasil uji menunjukkan bahwa biofilm komposit Kitosan/PVA yang dicrosslink asam sitrat dengan penambahan filler CNC dapat memberikan performa terbaik untuk menghambat laju pemasakan pada buah pisang, menghambat kenaikan kadar gula pada hari ke-7 dengan nilai 19,8% serta menghambat pembentukan gas etilen pada hari ke-7 dengan nilai 3,24 ppm maka dapat disimpulkan bahwa biofilm komposit kitosan/PVA dapat memperpanjang umur simpan buah pisang.
