Abstract

Soybean (Glycine max) is one of the main food commodities in Indonesia after rice and corn. Tempe is a typical Indonesian fermented soybean product that is difficult to find in other countries. Efforts to increase the selling value of processed soybean products have been carried out by tempeh craftsmens for decades. This study aims to analyze the average net income received from the sale of tempeh and the added value generated from processing soybeans into tempeh. This research method is descriptive research with a quantitative approach, using survey method. The research location is in the Tempeh Thematic Village, Koang Jaya Village, Karawaci District, Tangerang City. The sampling technique used a non-probability sampling technique, namely 17 tempeh craftsmens. Data analysis using income and value-added analysis of Hayami 1987 method. The results showed that the net income received by tempeh craftsmens in one production was Rp 329.763,- produces 160 kg of tempeh and the added value generated from processing soybeans into tempeh was Rp 3.491,-/kg with a value-added ratio of 21%.

Additional Information: Kedelai merupakan salah satu komoditi pangan utama di Indonesia setelah padi dan jagung. Tempe merupakan hasil fermentasi kedelai khas Indonesia yang sulit ditemui di negara lain. Usaha peningkatan nilai jual produk olahan kedelai ini telah dilakukan oleh para pengrajin tempe sejak puluhan tahun lalu. Penelitian ini bertujuan untuk menganalisis besar rata-rata pendapatan bersih yang diterima dari hasil penjualan tempe dan nilai tambah yang dihasilkan dari usaha pengolahan kedelai menjadi tempe. Metode penelitian ini merupakan penelitian deskriptif dengan pendekatan kuantitatif, menggunakan metode survey. Lokasi penelitian berada di Kampung Tematik Tempe, Kelurahan Koang Jaya, Kecamatan Karawaci, Kota Tangerang. Teknik pengambilan sampel menggunakan teknik non prablability sampling, yaitu 17 pengrajin tempe. Analisis data menggunakan analisis pendapatan dan nilai tambah metode Hayami 1987. Hasil penelitian menunjukan pendapatan bersih yang diterima pengrajin tempe dalam satu kali produksi sebesar Rp. 329.763 menghasilkan 160 kg tempe dan nilai tambah yang dihasilkan dari pengolahan kedelai menjadi tempe sebesar Rp 3.491,-/kg dengan rasio nilai tambah 21%.
