Abstract
Degenerative diseases are closely related to the disturbed intestinal microflora system. Maintenance of intestinal microflora can be done by eating functional foods. Functional foods refer to probiotics and prebiotics. Inulin acts as a low-calorie dietary fiber and as a prebiotic that can stimulate the growth of probiotic bacteria in the intestines of human. The development of science on the production of inulin continues to be carried out through research. This is done because the demand for inulin continues to increase. Therefore, the production of inulin in Indonesia from local raw materials is very necessary. The high carbohydrate content of taro beneng tuber (Xanthosoma undipes) indicates a high amount of sugar which may be an indication that there is inulin in it. This study was used factorial randomized block design with 20, 45, and 70% variations in the concentration of acetone as a solvent and 12, 18, 24 hours precipitation of the extraction, which aims to produce taro beneng inulin with the highest purity, and is similar to commercial inulin. Based on the results of the research that has been done, it can be concluded that the 20% concentration is the best concentration of acetone which has a very significant effect on the analysis of solubility and purity. Twelve hours is the best precipitation time which has a very significant effect on the yield analysis. There are interaction between the treatment of acetone solvent concentration and the time of precipitation in the analysis of yield, solubility, and purity. Additional Information: | Penyakit degeneratif berkaitan erat dengan sistem mikroflora usus yang terganggu. Pemeliharaan mikroflora usus dapat dilakukan dengan mengonsumsi makanan fungsional. Makanan fungsional mengacu pada probiotik dan prebiotik. Inulin berperan sebagai serat pangan rendah kalori dan prebiotik yang dapat menstimulasi pertumbuhan bakteri probiotik di dalam usus manusia. Pengembangan ilmu pengetahuan tentang produksi inulin terus dilakukan melalui penelitian. Hal ini dilakukan karena permintaan inulin terus meningkat. Oleh karena itu, produksi inulin di Indonesia dari bahan baku lokal sangat diperlukan. Kandungan karbohidrat yang tinggi pada umbi talas beneng (Xanthosoma undipes) mengindikasikan jumlah gula yang tinggi yang dapat menjadi indikasi adanya kandungan inulin di dalamnya. Penelitian ini menggunakan rancangan acak lengkap pola faktorial dengan variasi konsentrasi aseton sebagai pelarut sebesar 20, 45, dan 70% serta lama pengendapan ekstraksi 12, 18, dan 24 jam yang bertujuan untuk menghasilkan inulin talas beneng dengan kemurnian paling tinggi, dan mirip dengan inulin komersial. Berdasarkan hasil penelitian yang telah dilakukan, dapat disimpulkan bahwa konsentrasi 20% merupakan konsentrasi aseton terbaik yang memberikan pengaruh yang sangat signifikan terhadap analisis kelarutan dan kemurnian. Dua belas jam merupakan waktu pengendapan terbaik yang berpengaruh sangat signifikan terhadap analisis rendemen.
