Abstract

YUFIKA ARIYANTI. 2019. The Applications of Chitosan as Edible Coating of Sate Bandeng on Chilling Storage Temperature. Supervised by ARIS MUNANDAR and DINI SURILAYANI. Sate bandeng is a intermediate product with storability about 3 days until 6 days on chilling storage. The Applications of chitosan as edible coating on sate bandeng is expected to be able to add shelf life. The aim of this research was to determine optimum chitosan concentration as edible coating in order to extend shelf life of sate bandeng on chilling storage. This research was conducted from June 2018 until January 2019. This research consists of five stages such as manufacture and kitosan characterization, sate bandeng making, edible coating making , coating and sate bandeng storage with its test (proximate testing, TPC, TVB, peroxide numbers and organoleptic). The research was done experimentally by using Factorial Completely Randomized Design (FCRD) with 2 factors, namely chitosan concentration (0%, 1%, 1.5% and 2%) and storage time (days 0, 3, 6, 9,12 and 15) with 2 replications. Produced chitosan has rendemen 6.51% (dw), water content 8.35±0.04% (dw), ash content 0.56±0.24% (dw), deacetylation degree of 88.29%, molecular weights 161.99±4.90 kDa , viscosity 30.4 cps, solubility 87.74 ± 6.41% and the color solution is clear rather turbid. Based wet weight sample of proximate testing (water content 58.97±0.2%, ash content (2.4±0.4%), protein content (16.78±0.1%), and lipid content (13.96±0.01%)). TPC (47x103), TVB (16.81), peroxide numbers (0.3±0.4) and organoleptic parameter 2% chitosan are optimum treatment in preserving the quality of sate bandeng for 15 days storage time.
