Abstract

The Thai-style young coconut business has added to the culinary activities in the archipelago and the increasing demand for the number of local young coconuts, a kind of coconyoy (coconut nyoy) product. Young coconuts are generally priced at IDR 7,000 per piece to IDR 25,000 per piece. Not only that, this coconut husk peel aims to reduce the weight of the coconut so that it is easy to carry. The formation process in coconuts has often been done manually by the household industry using a machete blade. This process has a risk of high work accidents, long stripping time, and non-uniform shape. The purpose of this study is to design a vertical axis young coconut decapitation machine. The research methodology used is the Pahl and Beitz design method with the QFD method. The result of this study was the design of a vertical axis young coconut decapitation machine. From the results of the study, it was concluded that the size of the tool, namely 550 mm in length, 600 mm in width, 1750 mm in height, has two pulley sizes, namely 50.8 mm, 254 mm, the knife material used is stainless steel with a knife thickness of 1 mm and an electric motor power of 0.5 HP.

Additional Information: Bisnis kelapa muda ala Thailand sudah menambah geliat kuliner di nusantara dan kenaikan permintaan jumlah kelapa muda lokal, semacam produk coconyoy (coconut nyoy). Kelapa muda yang umumnya dengan harga Rp7.000 per buah jadi Rp25.000 per buah. Tidak hanya itu, kupasan sabut kelapa ini bertujuan kurangi berat kelapa sehingga mudah untuk dibawa. Proses pembentukan pada kelapa sudah sering dilakukan secara manual oleh industri rumah tangga menggunakan sebilah parang. Pada proses ini memiliki resiko dengan kecelakaan kerja tinggi, waktu pengupasan yang lama, serta bentuk yang tidak seragam. Tujuan dari penelitian ini yaitu merancang mesin pembubut kelapa muda sumbu vertikal. Metodologi penelitian yang digunakan yaitu metode perancangan Pahl and Beitz dengan metode QFD. Hasil dari penelitian ini adalah rancangan mesin pembubut kelapa muda sumbu vertikal. Dari hasil penelitian disimpulkan bahwa ukuran alat yaitu panjang 550 mm, lebar 600 mm, tinggi 1750 mm, memiliki dua buah ukuran pulley yaitu 50,8 mm, 254 mm, material pisau yang digunakan yaitu stainless steel dengan ketebalan pisau 1 mm dan daya motor listrik sebesar 0,5 HP.
